Birthday

Ibu 58th Birthday.  Wow! 58 oleidie and she has not been given the purple EZlink card.  What this?! They should start giving the senior citizen at the age of 50 ok.  They SHOULD! They MUST!  Anyway ... It was a success.  I attempted to cook 4 dishes and out of the 4 dishes, 3 were 1st time.  
Alhamdulillah it when well.  Tiring but it's a good tired.


This year we have 6 adults in our family. And in a few months time a new addition to the family.  Everyone is very excited.  Ibu cannot decide what the baby should call her Nenek? Nyayi? Oma? My brother also Papa, Ayah or Daddy-O but whatever it is we are very excited on the arrival of the newborn.


She is so mental.  She wanted a photo of her "action-action" cut cake.  I took soooo many photos of this cos she had to close her eyes when I snapped. Beside her is Nek Asmah her BFF I guess.


My ibu loves messy and berdechet chocolate cake.  You can't go wrong with chocolate origin's cakes.  There's only 2 option Original or Dark chocolate. This is sooooo a good choice.


Feasting.  Breaking fast together.  When I told her, she do not need to cook.  Guess where I get my stubborn-ness from ... She still cook lor.  Lucky only 1 dish if not we will have problem finishing the dishes.

Hahahahh ok I'm being annoying. I enjoy cooking for my love ones and I really hope they enjoyed my food.  I may not cook like my ibu but I put in a lot of thought and love when I'm cooking.

Nasi Jagung

This recipe is not mine.  I got it from Mat Gebu and change some ingredients and method here and there.  For the original please visit his website Tiffinbiru.  I like to follow his blog becos all his food looks so flavourful.  The ingredients he uses not stingy at all.  As for me some of the ingredients cannot be found or I don't use it often so I will replace it with something I have in the fridge.

I realised that this rice is so flavourful and its nice to eat on its own.


Nasi Jagung
Ingredients:
4 cups of Basmati
1 can of kennel corn (drained water)
1 chicken cube (I used Knorr)
2 pandan leaves
1 can of evaporated milk (I used Carnation)
4 tbsp Ghee
2 big onion, diced
4 cloves of garlic (smashed it)
2 inch ginger, sliced
1 cinnamon stick*
1 star anise*
5 cloves*
3 cardamom*(*aromatic spices)
1 lemongrass (bashed)
Salt to taste
Water (about 2.5 cups)

Methods: 
Wash the basmati and soak it for 25mins and drain. 
In a wok, melt ghee.  Add sliced ginger, garlic, diced onions, lemongrass, 1 pandan leaf and aromatic spices.
Add drained corns and mix in basmati.  Fry and mix well for 2 mins and of the heat.
Transfer the rice to the rice cooker.
Pour in the carnation evaporated milk, water, 1 pandan leaf, chicken cube (I dissolve it with a little bit of water) and salt to taste.
Stir and mix well. Once the rice is cook, garnish it with coriander leaves (cos I have some) and fried shallots.

Nasi Goreng Daging Merah

As promised to the Mister (which I forgotten yesterday), here is THE Fried Rice.  At one point of time, he can eat fried rice almost everyday. I just find it boring and a lazy way of eating.  Why lazy ... just put everything and anything u like in 1 wok. Where is the challenge ... hahah chey chey chey.
Oh and fried rice I can never make it twice the same recipe.  Cos it's always difference every time.


Nasi Goreng

Ingredients:
Rice (yesterday's leftover)
Sambal Terasi (I bought from Batam)
 
*this is sambal terasi in packets.  Taken from the net
Minced onion
Scramble egg
Fried ikan bilis
Oil

Method:
Heat up abit of oil just enough to scramble the egg. Fry and put aside
Add abit more oil for the ikan bilis.  Fry till crisps and put aside
Use the remaining oil to sautee minced onion.  
Once its translucent, add sambal terasi.
Stir abit and add rice mix well.
Add the egg and ikan bilis mix well and off the heat.

Daging Merah
Ingredients:
1 pack sliced beef
2 sliced onions
a few cloves garlic
Tomato sauce
Chilli sauce
Blended dried chillies
Oyster sauce
Fish sauce
Oil

 Method:
Heat oil and sautee garlic and onion.
Add blended chilli cook for 5-10mins
Add in the beef 
Season with oyster sauce, fish sauce, chilli sauce & tomato sauce
Mix well.  Once cook off heat

Chicken Rice

Sunday already ... there must be a day between Saturday and Sunday.  We had breakfast with MIL at Tekka Market.  Booooy was she famous ... met a few of her friends from table to table... 

As usual I had my thosei, teh-O ice and tebu with lemon (this one not so happening) ...  We went marketing to stock up before CNY.  Everyone worries that there won't be enough food over the long weekend. After that MIL went kai-kai and me waited for the boss to finish his shaving  .... what's left of it. 

Anyway dinner was chicken rice as we had guests ... I love guests so they can be my guinea pig.  Hahahha .... I try to use less or no oil in my cooking and other method of cooking ... for health sake ... slowly but surely changing ....


Chicken Rice

Ingredients:
Rice (2 part rice : 3 part water or chicken stock)
Garlic
Ginger
Chicken skin
Lemongrass
Pandan leaf
** garlic and ginger blend into paste
** lemongrass bashed
** tie a knot for the pandan leaf


Method:
  1. Saute garlic and ginger paste (without or with a little bit of oil) and chicken skin till aromatic
  2. Pour water or chicken stock in the rice cooker
  3. Add lemongrass and pandan leaf in the rice cooker
  4. Once simmer add in the sauted mix and put in the rice and mix well, leave it to cook.
  5. optional: Once the rice is cook, can shape it into balls or just serve like dat


Chilli Sauce

Ingredients:
Red chilli
Chilli padi
Garlic
Salt
Tomato sauce

Method:

Blend everything and boil it.

Oven Baked Chicken

Ingredients:
·         6 chicken wings about 500 grams
·         2 tbsp honey
·         1/2 tbsp oyster sauce
·         1 tsp sesame oil
·         1/2 tsp light soy sauce
DIRECTIONS
1.      Prepare the wings by cutting to 3 portions at the joint (drummette, mid joint and end tip). Freeze the end tips for making chicken stock. Pat dry with paper towels.
2.      Marinade chicken with the rest of the ingredients for at least half an hour or overnight.
3.      Arrange chicken pieces on wire rack with foil-lined tray beneath. Bake at preheated oven of 200°C (392°F) for 25 minutes or until chicken turns golden brown, basting with remaining marinade and turning once halfway.

Kailan with Oyster Sauce

Serves 4
Ingredients
200 grams of medium sized Kai-lan
Sauce:
1 small shallot, thinly slices (best to remain in rings for better presentation)
1 clove of garlic, chopped
2 tablespoons of light soy sauce
2 tablespoons of vegetable oil
Small pinch of salt and pepper
1 teaspoon of sesame oil
2 tablespoons of oyster sauce
Method
1) Wash and soak whole leavy Kailan vegetables in lightly salted water for 15 minutes. Boil a medium pot of water over high flame. Add 1 teaspoon of sugar (add more if your pot is large). Blanch Kailan in the boiling water for 1 – 2 minute, or once the leaves appear darker green in colour. Drain on a strainer and place nicely on a serving dish.
2) Heat wok with vegetable oil on medium heat, stir-fry shallot and garlic till fragrant and browned. Reduce heat to low fire when shallot and garlic are lightly browned to allow standing time. Sprinkle salt and pepper, followed by light soy sauce (beware of its sizzling effect by the mixture of hot oil and light soy sauce). Heat off and immediately pour onto the vegetables. Top sesame oil and oyster sauce. Serve.

Chicken Soup

Ingredients:
A few piece of chicken with bones

Blend
4 cloves garlic
2 red onion
2 inch ginger
  
1 Knorr chicken cube
Leaves leek soup
Fried shallots

Method:
Do not need to saute ...boil water and in chicken and blended ingredients, add in the chicken cube and salt to season.  Once the chicken is cook off heat. Add in the leaves leek soup and fried shallots.

Nasi Tomato & Ayam Merah

Hiatus for ages ...

Invited love ones to break fast cum dinner. I decided to be adventurous and attempt tomato rice.  Almaklum ibu came for raya and brought her battalion.

It turned out great alhamdulillah ... if not drop my ibu water face sey ... hee hee ...

Nasi Tomato Recipe
Ingredients
4 cups basmathi, rinse and soak for 30 mins (I used India Gate Basmathi Premium)
4 1/2 cups water
1/2 cup evaporated milk
1 onion (sliced)
1 inch ginger (just bashed it)
3 clove garlic (sliced)
2 tomatoes (diced)
1/2 cup tomato sauce
1 knot of pandan leaf
4 tbsp of butter
4 tbsp of oil
a handful of cashews
Salt to taste

Ingredients to sautee
1 cinamon 
1 star anise
4 cloves

Garnish
Chopped coriander 
Toasted Cashew
Fried onions

Method:

Clean, rinse the basmathi and sock it for 30 mins.

I did all this in the rice cooker:
Pour oil and butter in the cooker. Melt the butter.
Add ingredients to sautee.
Add in onion, garlic and ginger.  Cook until its soft.
Add pandan leaf, diced tomato and tomato sauce cook until the diced tomato break apart.
Add in evaporated milk and bring it to boil.
Season it with salt.
Add the rice, 4 1/2 cups of water and cashews and mix well. Leave it to cook.  Occasionally stir and mix.

Garnish it with chopped coriander, toasted cashews and fried onions.

For Ayam Merah I followed my mom's recipe and I've attempt a couple of time its not perfect yet but definitely better then the last ... recipe can be found here.

Ayam Masak Kicap Lada Hitam

Its a No-Work Monday for me ... erm ... not exactly true cos I still do laundry ... clean and cook ... hee hee ... Still suffer from weekend-coma lol ... 


My mom was to busy to entertain me yesterday so I decided to googled the recipe instead.

Ingredients
10 pcs of wings (other parts of the bird also can)
2 Onion (Sliced, round)
2 Red Chili (cut into 2)
2 Green Chili (cut into 2)
4 Potatoes (sliced medium thickness)
3 cloves garlic (bashed and chopped)
1/2 inch ginger (sliced)
1/3 cup of sweet soy sauce
2 tbsp black pepper sauce
1 stick of cinnamon
1 star anise
1/3 cup of water
Spring onion to garnish

Method:
Marinate chicken with tumeric and salt, marinate it for 20 mins and pan-fry half way and drain the oil
Fry the potatoes til golden brown and drain the oil
Using the same oil sautee garlic, ginger, cinnamon and star anise, once there's aroma add in the black pepper sauce and chicken.  Mix well and add water and sweet soy sauce.  With low heat let it thickens.
add in the onion, chili and potatoes and mix well.
Add spring onion for garnish

Sleepover - Games - Movie Marathon

Over the  weekends we had sleep-over session with some friends ... Played Jenga ... Uno ... watched movies ... and lots of food from peanuts to chocolates ... popcorns and ice-creams!

I baked Cheesy Mish-Mash for the 2nd time.


Ingredients:
Fried Wedges
Cooked Minced Meat
Pan-fried Turkey Bacon
Pizza Plus Cheese

Method:
Deep fry wedges / Cook Minced Meat / Pan fry Bacon and cut into bite size.
Mix everything season with salt and pepper and a tsp of oregano.
Put in a grease proof pyrex dish and cover it with mixture of cheese.
Bake it for 15 to 20mins once the cheese melted and golden brown.

A super long Jenga session ... 32 stories high ... on a lazy susan ... 


They bought me Dr Marten, Mary Jane's Shoe!!! for my birthday.... I love it.


Morning Breakfast we had Nasi Lemak... (Smell bunch lol)



Ingredients (My mom's version)
Rice
Coconut Milk
Salt 
Ginger (bashed)
Lemongrass (bashed)
Pandan leaves (a knot)

Method
Wash the rice properly.  Add all the ingredient mix well.

Sambal Tumis
Blended Dried Chili
Belacan (toasted and grind)
Blended Garlic 
Blended Onion
Sugar
Asam juice
Oil for frying

opt*
Ikan Bilis
Prawn
Egg
Peanuts

Method
Heat oil, fry chili, onion, garlic and belachan (low heat for 30 - 45mins) with constant stirring. 
Add asam juice cook it for 5 to 10mins.  
Add Sugar.  Let it boil for a while and off.
Add the item of ur choice (ikan bilis, prawn, egg, peanuts, fishballs) or u can choose to leave it empty.

Nasi Goreng Kampong and Sabsukaa

I took leave today cos I foresee I'll be exhausted since I was out the whole day yesterday.  Had breakfast and bowling with lovely cousins and attended a lomography workshop. Yeah definitely tiring.  I'm glad I took leave today. 


Not so good is that I'm still having flu and its sooooo irritating ... Anyway it did not dampen my spirit to cook ... yeah I guess.  I try to cook when I'm on leave lah.


Today I decided to cook Nasi Goreng Kampong. Cos the 'Boss' requested for it yesterday and since the ingredients are available from the NTUC ... Nasi Goreng it is.  Yesterday I saw a few posting of Sabsuka on Instagram, so I decided to cook that too.  NAFSU!!! tsk ... tsk ... tsk ... 




Nasi Goreng Kampong

Ingredients:
1 day rice

Blend ingredients:
Fresh Chilies
Chili Padi
1 garlic
1 1/2 onions
belachan

optional:
sliced squid
sliced fishcake
shredded chicken
scramble egg

salt, pepper, oyster sauce

Fried shallots to garnish

Method:
Saute blended ingredients for 5 to 10 mins
Season it with salt pepper, oyster sauce
Add the optional ingredients
Mix and cook well
Add rice, mix well cook for 5 to 10 mins 
Garnish with scramble egg and friend shallots




Sabsuka


Ingredients:
1/2 kg minced meat (i used thinly sliced beef)
1 cinnamon stick
1 large onion (diced)
1 large onion (blended)
2 cloves garlic (blended)
1/4 thumb ginger (blended)
1 bowl of chili paste
2 tbsp ground cumin
1/2 bowl tomato sauce
2 tbsp sugar
1 bowl tomato paste
2 tbsp chili sauce
2 tomatoes (diced)
2 cups water
1 tbsp Ghee (i used EVOO)
Black pepper powder
Coriander leaves
 fried shallot

Method:
Mix the onion, ginger, garlic and black pepper powder to your minced meat leave it to rest.
Heat cooking pot and fried the chili paste and cinnamon stick. About 5-10 mins add in your minced meat (which i used sliced meat - time to cook a lil bit longer).
Add in diced onions, tomato paste, chili and tomato sauce, cumin powder and water
Once the minced meat half-cooked, add Ghee (i added EVOO). For garnishing add in fried shallot and coriander leaves.
Serve fried egg with Sabsuka or either mix it in the Sabsuka (individual preference)



So after all the cooking ... its time to scrub the kitchen ... fuuuh I'm exhausted. When will I be able to be tai-tai ... hahah fat chance especially in Singapore pfft.

Mass Updates!

Lately I am quite occupied and don't have the time to update my blog... I will try my best to keep it update aite so bare with me otey ... 

05 Ramadhan 1432: Nasi Goreng Kampong. simple and fast. actually watever ingredient u wan to put u can put ok like sotong, prawns, chicken chunks ... its all up to ur creativity otey.


 09 Ramadhan 1432: National Day Red and White Theme so I've decided to cook Nasi Lemak.

Ingredients (My mom's version)
Rice
Coconut Milk
Salt 
Ginger (bashed)
Lemongrass (bashed)
Pandan leaves (a knot)

Method
Wash the rice properly.  Add all the ingredient mix well and dun forget on the rice cooker -_-''' (puasa2 nie selengernye bukan main lagy)

Sambal Tumis

Sugar
Asam juice

Method

 10 Ramadhan 1432: Sabsuka!
For this time round the method abit different.  Once everything is mixed together and almost cook, transfer it to a pyrex dish.  Drop afew eggs and drizzle 2 tbsp of ghee (i've use EVOO). Bake it in the oven at 180C for 10 to 15mins once the eggs are set you can take out and serve.
Mine abit watery so if you wan it to be thicker put less water aite ...

100th Entry: Nasi Ayam

03 Ramadhan 1432 

Ramadhan is here again... Alhamdulillah ... May we be bless with health and strength to do our ibadah in this wonderful month.  So let's us take this precious opportunity to pray and seek forgiveness.  Let's us work towards being a better Muslim Insya-Allah.  Happy Fasting to All ...


This is the first day during the fasting month this year that I cooked and break fast at home.  The passed 2 days Esa had to attend class so I decide to break fast at the mosque.  I had fun cooking I was so happy that I sang while cooking ... Happy giler!!! hahah ...

Chicken Rice

Bored of eating fastfood almost everyday so i decide to pull my lazy ass from the couch to the kitchen to cook dinner ... nothing fancy ... dun be fooled by the chicken cos i did not cook it hee hee ... bought it from NTUC Fairprice at Joo Chiat.  Yup we well  all the way to Joo Chiat from work to get 1 cute lil bird =D

A Monday Housewife

I've been taking Monday off to clear my time off.  So come Monday I cook, I clean and do laundry ....
I'm too lazy to go NTUC hee hee cos I woke up almost 10am ... so whatever in the fridge.



Chicken Rice
rice (2 part rice : 3 part water or chicken stock)
galic
ginger
chicken skin
lemongrass
pandan leaf
** galic and ginger blended
** lemongrass bashed
** tie a knot for the pandan leaf
  • saute blended garlic, blended ginger and chicken skin till aromatic
  • pour water or chicken stock in the rice cooker
  • add the bashed lemongrass and a knot of pandan leaf
  • once simmer add in the sauted mix and put in the rice and mix well
  • leave it to cook.
  • once the rice is cook, can shape it into balls or just serve like dat

Black Pepper Chicken
chicken fillet marinate in soy sauce (1tbsp soy sauce)
minced garlic
minced ginger
sliced onion
blended dried chili
sliced fresh chili
black pepper 
salt
2tbsp soy sauce

  • heat up oil, add garlic, ginger, onion and chili
  • once soft ... add blended dried chili cook well
  • season it with salt and black pepper
  • mix well and add soy sauce
  • add in the chicken
  • mix and cook well ... 10 to 15mins ... stir abit in between ... =D

Stay In Sunday

Sunday ... is the time to do house work ... laundry ... and cooking.  But today I just want to slack. 11+ hungry so I decided to cook Nasi Goreng Ikan bilis [Red] again. After I woke up from my nap i decided to have another attempt on Kak Rima's Almost Famous Cookies.


Nasi Goreng Ikan Bilis [Red]

Ingredients
Cooked Rice [1day old - left over is fine]
Dried Chili/Chili padi (2 chili padi sliced)
Onion (1 blend / 1 diced)
Garlic
Ginger
belacan (toasted)
Ikan Bilis (Pan-fry)
Ikan Bili Cube
salt/pepper/black pepper

Optional
Eggs (scramble)
Chicken

Methods
Blend dried chili, onion, garlic, ginger, toasted belachan
Heat oil and pan-fry the ikan bilis til crispy and take it out
Use the same oil to saute diced onion and sliced chili padi once soften 
Add blended mix cook well.
Add ikan bilis cube, season with salt and pepper.
Add in rice mix well
Add garnish like fried onion, eggs, chicken




Sticky soft dough texture


The end produce - success!!! finally hahhaha






Cookie dipped in milk before going to bed ... yummy!!!



Ingredients
250g salted butter,softened (i used SCS)
200g light brown sugar
1/4 tsp salt 
1/2 tsp coffee oil
1 egg
1 tsp vanilla extract
1/4 cup oats,processed to bits in a chopper (i omit this)
1/4 cup ground almonds (i omit this)
1/2 cup of your favourite nuts,chopped finely (optional)(i omit this)
1 pack of Nestle Tollhouse semi-sweet chocolate chips OR chocolate chunks 
300g self-raising flour 

Method
This is the most important step,at least 2 hours before,or the night before,beat the egg with the vanilla and the coffee oil to infuse or you can do this the night before,refrigerate it then bring it to room temperature before baking.

Preheat oven to 160C.

To the softened butter,beat in the sugar and the salt to combine. Beat in the egg and stir in the processed oats,ground almonds,optional chopped nuts and the chocolate chunks. Sift the flour and fold it in,this dough will not be too stiff but not too wet either.

For small cookies,place half-tsp of the dough,spaced slightly apart on the cookie sheet and bake for 9 to 10 minutes.

For large cookies, place rounded tbsp of the dough spaced apart on the cookie sheet and bake for 20 to 22 minutes.

Cool completely and let it sit overnight in an airtight container,this is for the flavour and fragrance to develop further.
