LoveU Tiramisu

It's break fast with your family weekend. Here is my contribution for the feast. In typical huge Malay families there will be few mains, few desserts, few drinks and a lot of appetizers. 

Sat will be at my side and Sun will be at Mr E's family. I decided to prepare both today so I can sleep longer tomorrow. I'm not too sure how it taste like as this is my first time using half mascarpone and half cream cheese. I hope it taste ok. 

If not ok just swallow and don't comment 😜


Ingredients
15 Ladyfingers 
1 Cup Espresso
4 Egg Yolks
½ Cup Sugar
1 Cup + 2 tablespoons Heavy Whipping Cream
1 Cup(8 oz.) Mascarpone (this batch I used ½ mascarpone and ½ cream cheese)
Cocoa Powder, for dusting

Optional item
Melted chocolate
Chocolate rasp | Coffee candy | Chocolate flakes and etc.

Instructions:
Place the egg yolks, sugar, and 2 tablespoons of the heavy cream in a small saucepan and whisk together well. Place over medium heat and whisk constantly, until the sugar is dissolved and the custard thickens(enough to coat the back of a spoon). Remove from heat, scrape into a large mixing bowl and let cool completely.

In another bowl, beat the remaining heavy cream to stiff peaks. Set aside.

Add the mascarpone to the cooled custard and whisk together until smooth. Gently fold in the whipped cream until well combined. And we are ready to assemble

To assemble:
1. Get ready a deep dish or small serving cups (your preference)


2. Scoop some or a tablespoon (for single serving) of the mascarpone mix into the dish or cups 


3. Dip the lady finger in espresso and it on the mascarpone mix


4. Drizzle some melted chocolate 


5. Scoop some or a tablespoon (for single serving) of the mascarpone mix to cover the lady finger

6. Repeat steps 2 to 5 until it reach to the bream of the dish 


7. Dust the top with cocoa powder and sprinkle your preference chocolate or candy on top


8. Refrigerate for several hours or overnight.

Macaroni "Tulang"

Creative at its best. Today Mr E asked for macaroni soup again. Nah I'm not cooking again. Ok I will lah so I decided to try something new to me ... I google for Tulang gravy from Qasehdkitchen made a few changes and add macaroni.

Ingredients
Meat cubes (I used beef)
2 diced onions
3 small carrots roughly chopped
Potatoes

blended ingredients
5 cloves of garlic
2 inch young ginger
50g dried chili
30g chili padi
30g red chili
3 spoons of white pepper, 3 spoons of black pepper, cumin and coriander powder

Methods 
Boil meat, onion, potatoes and carrot till tender
Take out the onion and carrot and blend it
Heat oil and fry the blended ingredients.
Add the broth from the meat. Season it with salt.
Add in the meat and cook it for 10mins.

Laksa Ibu

Mr E loves my Ibu's laksa but we do not want to trouble her. Next in line is me aka the Wife. Since fasting starts tomorrow, I decided to cook the laksa today. I don't want him to drool all day tomorrow.

I asked Ibu for the recipe and this was what she gave me yesterday, bawang putih, bawang besar, halia sikit, lengkuas sikit, serai, lada kisar sikit, ikan kembong or tenggiri, udang kering/ikan bilis and that's it .... on top of that she called to say nak kene tarok santan, kunyit or kari ikan... and I have to agak-agak the quantity. Mothers ... They cook with no measurements. 

So here's my portioning 


Ingredients:
To blend
4-5 cloves garlic 
1 large onion
A thumb of ginger 😜
15-20 dried chili
1 handful dried shrimp
1 handful ikan bilis
3-5 pcs of ikan kembong/ ikan tenggiri

An inch of galangal (bashed)
1 lemongrass (bashed)
1 medium pack of santan
Laksa noodles
Oil for frying
Salt to taste

Garnish
Tau Pok
Boiled tiger prawns
Boiled eggs
Fish cakes
Laksa leaves
Sambal tumis


Method:
Boil the fish and remove the bones. Keep the fish broth.
Blend garlic, onion, ginger, dried chili, dried shrimp, ikan bilis, boneless ikan kembong/ ikan tenggiri
Heat oil. Sautéed the galangal and lemongrass 
Add the blended ingredient and cook well and stir often. 
Once dried up add the fish stock and bring to boil
Add santan. Cook on low heat. Once boil can off the heat.

Serve. Put the laksa noodles in a bowl. Scoop the gravy on to the noodles garnish it with boiled egg, sliced fish cake, tau pok, boiled prawns, chopped laksa leaves and sambal tumis.

The outcome is not bad for first attempt, Alhamdulillah.

Harum Manis


Harum Manis
Ingredients:
300g gula Melaka (palm sugar)
350ml water
1 pandan leaf (I added.)
50g butter
3 eggs
200g sugar
350g plain flour
1/2 tsp baking powder (I used double-acting.)
1 tsp baking soda
1/4 tsp salt
1 tbsp vanilla essence
8-9 banana - sliced into about 1/2 cm thick (I used pisang raja.)

Method:
Combine gula Melaka, water & pandan leave in a pot & boil over medium fire until  gula Melaka dissolves. Strain syrup & add in  butter. Stir well. Leave to cool completely.
Prepare steamer & grease moulds with oil or butter. (I used  kuih lompang moulds.)
Combine plain flour, baking powder,  baking soda & salt. Sift set aside.
Beat eggs & sugar until light & fluffy.
Fold in flour.
Pour in gula Melaka syrup a little at a time, stirring until well blended.
Pour batter into moulds until 3/4 full. Top with sliced bananas.
Steam for 15-20 minutes.
Leave to cool completely & remove cakes from moulds.
Makes about 56 pieces.

Nagasari Jagung


Nagasari Jagung

Ingredients:
1 can of whole kernel corn)
250 ml coconut milk + a pinch of salt
450 ml water
175 g sugar
1 screwpine leave + 200 ml water
(bring to boil with low heat. Put aside to cool)
1 paket Hoon Kwee flour (mix well)

Methods:
1) Mix Hong Kwee flour with screwpine leave flavored water in a pot on low heat.
2) Then add water, sugar and coconut milk.Mix well and stir till the mixture almost thickens. Add in kennel corn and mix well.
3) Once its thickens remove from the heat.
4) Scoop the mixture 2 tbsp on a plastik or small cups or banana leave and fold. Work quickly as the mixture will set once its cool. Put in the fridge to chill.
5) Nagasari Jagung is nice eaten cold.

Pat-Tay-Yaaa

This is not one of those trips that we go out to hunt for food.  This was a hectic and tiring trip I had so far thou I enjoyed it.  Yes I tagged along with hubby's company's trip to Pattaya.
I 've been to gatherings but not a getaway with them ... I've conclude that this trip has waaaay to much screaming ... yup ... screaming ... like literally.

So the flight from Singapore to Bangkok was about 2hrs and a bus ride from Bangkok to Pattaya was another 2hrs.  I was getting restless and annoyed and hungry and tired and aching and everything you can think of ... 

We reached the hotel! Yey like finally. The next 3 nites at Amari Ocean Pattaya.  Very nice and not so decent hotel.  Where are all the locks for the toilets and the bathroom??!!! I felt so insecure.


 Nice bed ... but why its the toilet and bathroom the opposite ... maunye huru-hara tenggah mandi nak terberak... irrit eh layout.

We did not manage to rest as we need to freshen up and solat and meet at the lobby for dinner.  The dinner was not at the hotel.  It took 45mins to 1hr bus ride to dinner. Hungry Man is an Angry Man was an understatement.
So after 1hr or so we reached Suttangrak. Actually before they placed everything I took the picture liao ... heeh it was a wide spread,




We received 5am wake-up call.  Yes 5am. After we had breakfast, feeling-feeling walk by the pool gitu lah... and we left for Parasailing. The weather changed instantly.  Lucky everyone had their turn and it rained heavily.  The sea was choppy and the boat ride was making me oozy.  But I can't close my eyes as the screaming was like a siren hahahah. Sorry but I find it entertaining lah.


Once we reached Sukkee Beach, it stopped raining.  Amazing.  So they did jetski and banana boat.  He's boss asked me to take part.  I gave him the ok look.  The next moment I parked myself one corner very cozy. He came and shocked me.  "I ask you to play jetski, you sit down here and yawn." Caught red handed woh ... af cos lah yawn woke up freaking 5am leh I'm still cranky ok. I smiled and cover my face.  I am good ad avoiding conversation hahahah.


I love the beach it looks so gween and yummy ... ok I'm hungry.




After all the water sport ... dry ... wet .. dry ... wet ... it's time for lunch.  We had lunch at A-One Hotel. Food not bad.  But the herbal duck soup is a no no ok.  Go Thailand, tom yum is a must!


After lunch ... we had 2 hours before the D&D (Drink and get Drunk).  We got change took cab to Central Festival Mall.  less than 5mins ride.  10 baht per person.


The taxi (pick up) can fit about 10 to 12 pax.  Since there's only 7 of us it was quite spacious.


Walk around take pictures ... after a while I got bored cos it's a mall after all ... so we decided to park ourselves at Starbucks and wait for the rest to finish shopping.

Sight-seeing, people-watching ... I realised that Pattaya is Russian-Friendly. Pweety-pweety russian girls =p.

On the way back to the hotel.  We paid 100 baht for the driver to take us straight back.


Moving fruit stall!. Its the only time my fruit intake is on the higher side. 

After all the fruits I'm too full to eat dinner at the D&D.  It was a fun night feels like a chinese wedding with never ending "Yam-Seng" ... Some of them drunk their ass off and forgotten about the next day team building.  It's quite entertaining to see the hungover faces.


The bus ride took like forever to reach the zoo.  So oklah I decided to take part. I dowan to be bored waiting.  The hike up was so frustrating!. I hate morning walks. I hate climb stairs.  Now I need to climb uneven steps.  Major urrgh!


I try not to complain. The word was TRY ...


After 20 mins of walking ... we reached the place.  Briefed on safety procedures and put on the equipment. Seriously, I was a little bit nervous. After the first station, I got the hang of it. I enjoyed it and annoyed with the 2 professionals that's trying to scare us shit-less.  Not funny lor.

Since I joined the first group, we end the course at almost 2pm and had lunch right after that.  Nope we did not wait for the rest. Hee Hee ... 

After that we went to the Big Bee Farm and did the touristy stuff. 


I don't like to look at bees, they give me the creeps eeeeik. 


But this chocolate honey ice cream was yum! Thank you bees for producing the honey for my consumption =p.




by the time we reached hotel at 6pm.  Wash up and get ready for dinner.  Journey to dinner taking freaking long.  When we reached, we still need to walk to the other end from the entrance -____-''


I can't remember the place that we had for dinner.  It's facing the beach and there's mini fire works after dinner. The food was ok. After dinner we went Tiffany Show.


It was entertaining honestly.  But I was too tired half way thru the show I feel asleep. The props were all over the top.  The dresses are all gorgeous.


I want to cry! How can they the men looked like that and I look like this.  
They had the photo taking session at the podium very nice and fairy tale like.  Ok I need bed.


Last day looking at the beach scenery. Ok dah I'm ready to back to Singapore heeh.


Lunch was at Jasin Bangsaen.  Finally I had my Iced Thai Milk Tea here.


Coconut Ice Cream ... on a raining day...
