Roti John Serunding Cheese

Do I look like I'm that creative? No. I got this idea from my mom and my mom got this idea from her besan.  Interesting and hilarious.  It just tickled me as the main ingredient is serunding. This is when you are lazy to prepare the meat lah kan.

And surprisingly the mister oso like it.  I tweak abit the recipe cos my mom did not put mayo in hers.  I put cos I want the serunding to stick on the bread.  Sooo clever alahai... 


Roti John Serunding Cheese ala Mystyle

Ingredients:
Bread (can be any bread, square, loaf, bun)
Mayo (optional)
Eggs
Cheese (I used mozzarella)
Serunding (meat, chicken, fish, plain)

Methods:
I used hotdog bun.  I cut it on the side not all the way thru.  
Spread mayo thinly and sprinkle generous amount of serunding on it.
Heat a non-stick pan.  whisked egg and pour it in the pan not too much enuf to cover 2 buns.
Put the bun on the egg with the serunding facing down.
Once the egg is cook flip it.
Add mozzarella cheese onto it and fold the bun into half.
Let it be in the pan for a while just for the mozzarella cheese to melt.
Can serve it just like that or cut into half.


I brought this stack of Roti John Serunding Cheese to my BIL's place across the road.  It was a hit with the kids. A nice and simple dish to prepare.

Sabsuka

Sunday is visit your mom's day.  And I did not come empty-handed.  I volunteered to cook for the family.   My brothers will be home.  So I hope to finish cooking early and head to ibu's house.  

Off all the 4 days of fasting, I think sunday I ate the most.  Apart from the sabsuka, there's sardine puff from Shakilah's family, ibu fried some chicken drumlets and chicken seaweed.  There's kuihs and I manage to make cincau drink.  So rajin right.  Not all the time hor.

Anyway sabsuka is a repeated recipe.  I have cooked this so many time and each time I will improvise according to my guest.


The naked sabsuka


.... garnish with fried shallots...


... sprinkle chopped coriander leaves...


... and drizzle olive oil ..... or melted ghee...

Ingredients:
1/2 kg minced meat
1 cinnamon stick
1 large onion (diced)
1 large onion (blended)
2 cloves garlic (blended)
1/4 thumb ginger (blended)
1 bowl of chili paste
2 tbsp ground cumin
1/2 bowl tomato sauce
2 tbsp sugar
1 bowl tomato paste
2 tbsp chili sauce
2 tomatoes (diced)
2 cups water
1 tbsp Ghee (i used EVOO)
Black pepper powder
Coriander leaves
 fried shallot

Method:

Mix the onion, ginger, garlic and black pepper powder to your minced meat leave it to rest.
Heat cooking pot and fried the chilli paste and cinnamon stick. About 5-10 mins add in your minced meat.
Add in diced onions, tomato paste, chili and tomato sauce, cumin powder and water
Once the minced meat half-cooked, add Ghee (i added EVOO). For garnishing add in fried shallot and coriander leaves.
Serve fried egg with Sabsuka or either mix it in the Sabsuka (individual preference)

Bistik Daging

It's the first weekend of the fasting month. And MIL was at home so we break fast at home lah. Since the other days we broke fast at the mosque nearby.  

Ask the Mister what he wants to eat and he said anything to eat with bread.  How simple! Woke up early to prep and started cooking after asar.  The taste was quite mile no kick.  Maklumlah puasa tak boleh rasa =p.

But can better if can taste while cooking I would have alter the flavour lah.  I did some Google-ing and I like Tiffinbiru's recipes. Easy and hassle free though I made some changes to the recipe to suit may laziness hahaha.


Ingredients:

500g minced meat or sliced meat
5 potatoes
Black pepper
1 cinnamon stick
Blended dry chilli
Salt and sugar to taste
Peas
Water
Tomato sauce
Tomato paste
Beef stock

Blended ingredients:
                                  1 onion
                                  6 red onions
                                  3 cloves garlic
Oil for frying

Method:

Season the meat with black pepper and salt and put aside.
Heat oil. Throw in the cinnamon stick and the blended ingredients.
Add the potatoes and mix well.  Add water cook the potatoes till half cook.
Add in the meat and tomato sauce, blended chilli, tomato paste, and beef stock.
Mix well and cover the pot with low heat till the meat and potatoes are cook.
Season with salt and sugar cook till gravy thickens.
Garnish it with peas, fried shallots and chopped coriander leaves with sliced French loaf.

Bread & Butter Pudding with L.O.V.E

New year's resolution to update blog promptly.  Oklah slightly late... hee hee ... I made this last saturday.
I will try to update one a week lah eh if I'm free. Umi ask for bread & butter pudding a few weeks back so I gave her.  I realised that I've not been baking for a super long time.

Since she (my cousin and my niece) visited ibu last sat I decided to surprise her. I took the recipe from Livin' In The Kitchen. The recipes here are all mouth watering ... my gawd!!! I wish I can try everything in there ... but .... I have to be focus ... one at a time.

So here we go Bread & Butter Pudding with Vanilla Sauce. I did the Vanilla Sauce first cos I chill it before serving.



Bread and Butter Pudding with Vanilla Sauce

Recipe from “LenĂ´tre’s Desserts and Pastries”
7 ounces fresh sandwich bread, uncut
Butter for bread
2 cups, (generous, 1/2 1) milk
1 vanilla bean (I used vanilla bean paste)
3 eggs
2 egg yolks
1/2 cup, generous (125 grams) granulated sugar

Optional
1 cup of sliced almond
1 cup of chocolate chips


Remove the crust from bread and slice very thin (set crust aside)
Lightly butter the slices, cut them in half, corner-to-corner so that they are now 2 triangles.
Brown the buttered side of the bread under the broiler for 3 minutes, cover oval baking pan with bread, toasted side up in overlapping pieces.
Sprinkle sliced almonds and chocolate chip.
Preheat the oven to 425F.
Boil milk with vanilla bean. Beat the eggs and the egg yolks with the sugar for a few minutes, until mix whitens. Slowly pour hot milk (not boiling) into egg mix while stirring.


Pour the combined mixtures over the bread while pressing down bread that floats with a spoon.
Place the Bread Pudding into a larger dish. Pour boiling water in the larger dish until it reaches half way up the sides of the smaller dish.
Bake 30 minutes, continue to press down bread when it rises to the surface in oven. When baked, allow to cool then place in the refrigerator until ready to serve.
Make Vanilla Sauce (can be served without).


Vanilla Sauce
1 cup (1/4 1) milk
1/2 vanilla bean, split lengthwise
3 egg yolks
1/3 cup granulated sugar
Place milk and vanilla bean in a saucepan and bring to a boil. Lower the heat, cover the pot and let the vanilla bean infuse for 10 minutes.
Beat egg yolks and sugar on medium speed until the mixture whitens. While beating, add milk to yolks. Pour the mixture back into the saucepan. Heat slowly, stirring constantly. When liquid coats spatula, remove the saucepan immediately and place in a bowl of cold water to stop the cooking. Remove the vanilla bean.
Cool mixture in bowl of cold water for 30 minutes. Whip sauce occasionally while cooling.
Once cooled, pour over your Bread and Butter Pudding and return to the refrigerator,

Quickie

Pepperoni Pizza Puff again???!!! ... This is my 3rd attempt and it looked much better then the first 2.  This batch I make for my lil cousin, anggah ... since we are going to the mosque on sat morning ... i decided to wake up slightly early to do it. It's so simple it took less den 30mins. Baking time is abt 15 to 17mins only and  for this batch u can get abt 23 to 24 pcs. Do try it ok, its easy and fast ... nice for munchies and tea snacks =D ... good luck and have fun ... here's the recipe.

Tea Session with the ladies

2nd day of CNY. No visiting ... decided to do housework and other 'stuff''. Invited my 2 galfwens over to 'play' in my lil pink kitchen.  We decided on CHURROS and the Pepperoni Pizza Puffs. While our hubbies wen for Friday prayers, the wives were busy in the kitchen.  We had fun. Yana is very good at free hand =D. and thank Liz for her weighing machine =D. 
After all the cooking we joined the hubbies at Liz's crib sharing and enjoying our food AND watched tv.

Pizza-John?!

The plan was ... to cook bistik ... but a lot of stuff out of stock oleidie ... Lunch time I wen to Hong Lim temp market to get ginger, galangal, lemongrass, peas, tomato puree...... but oni ginger is available =S .... wen to Rivervale Plaza after work .... not much there too haiz ... so .. I ask ... you wan roti john or pizza???! ... and our PizzaJohn is born ... wakakaaka ... *lame*


Ingredients:
Bottom: Pizza Dough - Square Bread - French Loaf [watever u like]

Topping:
500g minced beef (if u wish to use other meat also can)
1 large red onion (diced)
2 to 3cm of ginger (minced)
4 to 5 cloves of garlic (minced)
salt and pepper/black pepper to taste
2 tbsp of oil/EVOO
Cheese

optional
**blended chili (with or without up to u)
sliced mushroom/diced tomato/diced capsicum/pepperoni ... the list goes on ...
in short ... u put watever u like lar ok.

Method:
Saute garlic then ginger den onion until swell.
Add in the minced meat, stir until all the meat change colour
Season with Salt and Pepper.
**If you wan it spicy this is the time to add blended chili 
(goreng sampai chili garing) 
**If u put chili den add in abt 2tbp of tomato sauce
Once the meat mixture is dry and cook through, off the heat
Add all the optional ingredients like mushroom, capsicum ..(mix well).. if dowan den dun need
Put a bit of topping on bread (of ur choice/pizza dough)
Top with cheese (I use shredded cheddar and Mozzarella)
Bake it with top this only once the cheese melted can take it out
(Use toaster oven is better but I dun have so i use oven with 175C top heat only)


I story abit ok (with my broken english). The first time I tried this recipe wen i was in sec 2 ... dat was 14yrs ago. This recipe has gone through alot of modification. Wen I was in school the recipe is very simple. Diced onion, minced meat, salt and pepper ONLY (shepherd's pie filling)... den it evolve ... hee hee ... I mix here mix there ... trial and error until I am satisfied with this recipe. This recipe is flexible can use it as a base for fried rice (which I intend to later today), or as popiah filling, or puff filling, or tart topping ...

Pepperoni Pizza Puff

I stumbled upon this recipe while playing with my tumblr ... It looks simple and do-able hee hee ... its not huge ... a bite size pizza ... cool or waaaat ... so i decided to try it ... today or never hee hee ... hubby bought for me a mini muffin tray ... im so loving it ...
(i realised dat all the sentence not link one hahaha ... sorrylar im too sleep to think at the same time i want to post the pix i took just now)

Ingredients
171g cup flour
3/4 tsp baking powder
200ml milk
1 egg
1 1/4 cup shredded cheese (I used cheddar and mozzarella)
4 ounces chopped pepperoni
Directions
1. Grease a mini muffin pan with nonstick cooking spray.
2. In a large bowl, combine flour, baking powder, milk, egg, cheese, and pepperoni, stirring until completely mixed.  Spoon batter into the prepared mini-muffin cups about 2/3 full.
3. Bake in an oven preheated to 400 degrees for 15-17 minutes. Serve while warm.

Bread Pudding and Baked Pasta

i'm so excited!!! ibu came just now with her fwen and oyin... weeeeee... i had planned before hand wat to cook.  she loves bread and butter pudding... so i have decided to make dat which i google the recipe from allrecipes.com heehee ... 
i had a few guests, while breaking fast my second bro and galfwen came... ha ha they lost their way cos im not a very good directory =D ... after dat the ONE wen to pick up my mom, her fwen and my lil bro.  they reached abt 8.30pm.  not too long after dat my aunt and family came. din get to take picha cos too busy hahah ... anyway ... here are the end product. i've done this recipe before ... a couple of times, chances of me panicking less den 5% lar ... 





Ingredients (ive double the portion)

  • 6 slices day-old bread
  • 30 g butter, melted
  • 80 g raisins (optional) i replaced it with semi chocolate chips
  • 4 eggs, beaten
  • 475 ml milk
  • 150 g white sugar
  • 2 g ground cinnamon
  • 5 ml vanilla extract

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Break bread into small pieces into an 8 inch square baking pan. Drizzle melted butter or margarine over bread. If desired, sprinkle with raisins.
  3. In a medium mixing bowl, combine eggs, milk, sugar, cinnamon, and vanilla. Beat until well mixed. Pour over bread, and lightly push down with a fork until bread is covered and soaking up the egg mixture.
  4. Bake in the preheated oven for 45 minutes, or until the top springs back when lightly tapped.






Ingredients

1 large onion (diced)

4 cloves of garlic (minced)

1/2 thumb of ginger (minced)
2 tbsp of blended dried chili
500g of minced meat
salt
pepper
black pepper
pasta of ur choice
cheese

optional items
capsicum (diced)
sliced mushroom
sliced tomatoes

Directions



  • heat pot with water, a bit of olive oil and a pinch of salt.  
  • once boil, add in the pasta.  cook it to al dente stage.  
  • drain out the water and transfer the pasta in a bowl of ice to stop it from further cooking.  
  • put it aside
  • heat pan with a bit of oil to pan fry.  saute the diced onion garlic and ginger.
  • add in minced meat, cook till it changes colour
  • season with salt and pepper 
  • add in blended chili
  • cook it dry
  • add black pepper and off the heat
  • add optional items if u wan to and mix well den add the pasta
  • put it in a greased pyrex and cover it with mozzarella cheese
  • bake it in 190c oven for 30mins or till all the cheese melts and turn golden brown
  • serve it hot to have the stringy effect of the melting cheese

Homemade Garlic Bread

On leave today getting ready for REDANG Baybeh!!! hee hee ... Since hubby has to work today ... I'll keep myself useful ard the house. I decided to cook .. thou its 50/50 hahahha anyway here it is my very own garlic bread.

Garlic (toast or roast and mashed fine)
Butter (Salted)
Oregano (ur choice of spice or herbs)
Extra Virgin Olive Oil
Baguette (ur choice of bread)
Line it with aluminium foil or drizzle some olive oil

done match it with any icy cold beverage hee hee ...
