my Precious off in lieu

I woke up feeling so excited ... cos I have lots of plan today. Its been a while since I really cook ... so today I google for some recipes. Set ... went to market and back. So I decided to try Chicken Fried Steak, Pasta Salad and Baked Mashed Potatoes. Here go nothing ... hee hee ...


Chicken Fried Steak Cuban Style


  • Ingredients
  • 4 (4 ounce) cube steaks
  • 2 eggs
  • 3 cups dry bread crumbs
  • 1 tablespoon dried oregano
  • 1 teaspoon ground cumin
  • salt and pepper to taste
  • 1 lemon, sliced
  • 2 cups vegetable oil for frying

Directions

  1. In a shallow dish, combine the breadcrumbs with the oregano, cumin, and salt and pepper. Beat eggs in another shallow dish. Dip each steak in beaten eggs, and then in the breadcrumb mixture. Make sure to cover each steak well with the breadcrumb mixture.
  2. In a large, deep skillet, heat 1inch oil over medium high heat.
  3. Place the steaks in the oil when it's hot (so that the breading will not stick to the pan). Cook steaks, turning once, until brown for well done and golden brown for medium. Serve with lemon slices.



Baked Mashed Potatoes (I tried to replicate popeye's mashed potatoes)

Ingredients
Potatoes (clean, peel, boiled with chicken stock)
garlic (roast with olive oil)
minced chicken (pan fry)
Salt and Pepper
Butter

Directions

  1. Boil potatoes in chicken stock and mashed.  add butter
  2. roasted garlic mix with the mashed potatoes
  3. season with salt and pepper
  4. add minced chicken
  5. mix well
  6. put in casserole and bake for 10 to 15mins


Pasta Salad

Ingredients
Pasta (boil)
Chicken Breast (boil)
Mayo
Lemon
Parsley
Crab stick
butter
olive oil

Direction

  1. Everything put in a bowl and mix.
  2. Put in the refrigerator.
  3. Serve cold

The ONE's friends had planned this game for like ages (exaggerate abit lar ... i think it was planned somewhere beginning this year) hee hee so Sunday it is ...
we met at Red Dynasty at 10.40am and we all came prepared ... Army uniforms ... extra clothing... and lots of stuffing hahhaa ...

Had lots of fun and sweat alot too ...
Feel the Pain . See the Pain . Pain emotionally? hee hee ... seriously its painful when they say it stings like mosquitoes they are lying ... hahahha ... my finger ... inner thigh ... and near the arm i have BIG blue black ... paaaaain!!! hee hee

Home-cooked meal

Decided to have breakfast come lunch before we went for ratib.

 I bought this frozen from NTUC

 Stir-Fried Veggie

Ingredients
Long Beans 
Carrots
Baby Potatoes
Sliced Onion
Chopped Garlic
Chopped Ginger
Sliced Chili/Chili padi
Chicken Cube
Oyster Sauce
Salt 
Pepper

Methods:
Sauted garlic, ginger, onion and chili
Add carrots and potatoes, cook till tender
Add long beans
Season with salt, pepper, oyster sauce and chicken cube.
Cook for 5 to 8 mins
Garnish with spring onion and coriander and fried shallots

Spiced Wedgies

Ingredients
A few potatoes cut into wedges

Salt
Black pepper
Cajun powder
Paprika powder
Garlic powder
Chopped Coriander

Methods
Deep fry the potatoes
Drain access oil
Put the fried wedgies in a container
Add all the powdered ingredients
Cover the container and shake it well
Ta-da ... seasoned wedgies =D

Nasi Goreng Kampong with Ayam Goreng


Fried Rice/Nasi Goreng

Ingredients:
1 day rice

Blend ingredients:
Fresh Chilies
Chili Padi
1 garlic
1 1/2 onions
belachan

optional:
sliced squid
sliced fishcake
shredded chicken
scramble egg

salt, pepper, oyster sauce

Fried shallots to garnish

Method:
Saute blended ingredients for 5 to 10 mins
Season it with salt pepper, oyster sauce
Add the optional ingredients
Mix and cook well
Add rice, mix well cook for 5 to 10 mins 
Garnish with scramble egg and friend shallots


Fried Chicken Marinate

curry powder
salt
blended dried chili

Ayam Balado

I'm not a writing mood cos i have sick ppl to take care of so here's the recipe for the following pix aite.
TuesNite Dinner.


Stir-fried Veg
Ingredients:
veggie (of ur choice)
mushroom (of ur choice)
garlic (bashed)
onion (sliced)
red chili (sliced)
dark soy sauce
oyster sauce
salt
pepper

Method:
Saute garlic, chili and onion. 
Add in mushroom.
Season with salt and pepper.
Add in dark soy sauce and oyster sauce
Add veggie ... stir for a few mins and off the heat


Ayam Balado
Ingredients
chicken (Meat/Other part of the bird)
salt
lime
blended ingredients
red chili
chili padi
garlic
onion

salt
chopped coriander

Method:
Mix salt, lime and meat for a few mins.
Half cook the chicken
Oil for frying 
Add the blended ingredient.
Masak sampai garing =D
Add salt, and chicken 
Cook until the chicken is fully cook
Garnish it with chopped coriander

Birthday Cuppies for the Babe

I can be a klut in baking eventhou its so simple to the majority.  Anyway I decided to bake cuppies for THE birthday gal.  I cheat abit lar .... erm no no no actually I cheat alot hahahah ... thanks to Betty Crocker.
Yup I bought a box of Betty Crocker Chocolate Fudge Cake Mix =D clever kan ... so I won't screw it up ... khe khe khe and the ganache was clever too hee hee ... the ONE sent me to esso to get my 'ganache' aka nutella =D khe khe khe ...
Becos I've tried making ganache before but it turned out watery so ... I decided to just keep it simple lar ...
So hee hee the recipe eh ...
1 box of Betty Crocker Cake Mix
3 eggs
1/2 cup oil
1 1/3 cups water

Happy Baking khe khe khe ...

 I add chocolate chip in the center so it has the melting effect when you bite it...

 ready for the oven ...

 ???!!! i dun under why it rises on 1 side only...

 cut of the uneven top so I can spread my 'ganache' hee hee...

 Why this happen??? ... Cos I bought 25 flowers and I tot its enough for the name ... hence the Honey Stars

 the instruction says put 2/3 full and i did ... =S

 Ready for packing ... I woke up at 6.15am to pack and realised all cannot fit in 1 box
