Roti Kirai

This is my first attempt.... erm ... not too bad. I managed to get nice lacey kirai after a few times. Maybe the folding part can be improve.

Nasi Goreng Kampong with Love

Dinner today was something less complicated hee hee...

Ingredients:
rice
1 big onion (sliced)

Blend all this ingredients
  • 1 big onion
  • 4 cloves garlic
  • 5 red chili
  • 2 green chili
  • 4 chili padi
  • 1 thumb size of belacan
  • 2 table spoons dried shrimp (soak in water)
  • 2 table spoons ikan bilis (soak in water)
Oyster sauce
Pepper
Salt
Sesame Oil

Additional ingredient (to your liking)
eggs
sliced hotdog
sliced fishcake
sliced nuggets
Veg (of your choice)

Method:
Fry the onion this soft and put in the blended paste.
Fry till the paste change to a slightly darker colour.
Season it with salt, pepper, oyster sauce and a bit of sesame oil.
Stir well.
Add in the additional ingredients mix well and put in the rice.
Mix well and let it cook for another 5 to 10mins and its done.

Mee Teow Hong Kong

Wednesday... feel a lil bit rajin ... so i decided to cook dinner ... =)

Ingredients


Mee (of your choice)
chopped garlic
veg (of you choice)
prawn
sotong
fishball
chicken stock
pepper
oyster sauce
sesame oil
salt


Method:
Brown the garlic in a lil bit of oil
Put in pepper, oyster sauce, sotong, prawn and fishball mix well
Add pepper, sesame oil and chicken stock. Put to boil
Then put in the mee and the veg.
Let it simmer and off the heat.
Serve with pickled chili




Pickled Chili/Cili Gerok


Ingredient:


Chili
Salt
Sugar
Vinegar
Water


Method:


Sliced chili put in a pan cover it just nice with water
Salt and sugar to taste and a spoonfull of vinegar.
Bring to boil.

Chicken Salad

Ingredients

Marinate chicken
Chicken meat
Garlic
Oyster sauce
Black pepper
Dried chili (blended)
A few salad of your choice (e.g.iceberg head lettuce, sliced and chopped)

Tbsp mayonnaise
Thousand island
fresh squeezed lemon juice
Salt and pepper to taste

Method:
Prepare all of the salad ingredients and combine them in a large bowl.

Prepare the dressing separately. Combine the mayonnaise,thousand island and lemon juice. Taste for proper balance. The dressing should not be too sweet nor too sour. Adjust the ingredients until you have achieved the balance you want. Add salt and pepper to taste.

Mix the dressing in with the salad ingredients. Salt and pepper to taste.

Fettuccine with Bolognese Meatballs

Ingredients
Fettuccine (or pasta of your choice)
Olive oil
Chopped onion
minced garliginger
1/2 kg ground beef
butter
Chopped or diced tomato
tomato paste
oregano
salt
black pepper
meatballs

Method:

Cook pasta in boiling water with abit of oil so dat it wont be clumpy. Not too long cos it will be soggy.
Drain the water. Put under running water and ice.

In a large saucepan saute the onion, ginger and garlic in the olive oil. Add ground beef and continue cooking til dry.
Add the butter, oregano, chopped tomatoes, and tomato paste. Let sauce simmer for 10 minutes. Season with salt and pepper.
Put in the pasta and mix well.

Caramel Pudding

Ingredients


Caramel:


40g sugar
10ml hot water


Custard:


Part A
200ml fresh milk
10g sugar
1/2 tsp vanilla essence


Part B
1 whole egg
2 egg yolks
30g sugar


Methods:


Caramel: Melt sugar in a sauce pan, stir until golden brown. Once it starts bubbling, stir in hot water then remove from heat.
Lightly grease the moulds, then fill each mould with abt 1 tsp of caramel.
Swirl the mould to coat bottom of mould when the caramel is still hot. Set aside for later use.


Custard:
Part A - Bring together milk and sugar, bring to boild and low heat then stir in vanilla essence. Turn the heat off and set aside for later use.
Part B - In a mixing bowl, lightly whisk eggs with sugar. Then pour in milk in steam, whisk rapidly until well blended.


Sift the mixture then fill each mould with mixture, and steam on low heat for 15-20mins. If using oven, place moulds in a tray then fill tray with water. Cover tray with aluminium foil. Bake at preheated oven, 140C for 25-30mins.


Turn the heat off, let puddings stay in the steamer or oven for further 10mins.
Chill before serving.


ps: To produce smooth texture custard, the mixture must be sifted to remove bubbles then pour into the mould gently

Shrimp Cocktail

Ingredients


To marinate the shrimp:
Shrimp (Clean and de-vein)
Chopped garlic
Crushed black pepper
Olive oil
Oyster Sauce


Cocktail Sauce:
Ketchup
Lemon juice
Tabasco
Fine chopped garlic
Chopped parsley
A sprinkle of oregano
Black pepper
Olive oil
Diced onion
Chopped coriander


Methods:


Marinate the shimp over nite. Can either pan fry or grill
Cocktail sauce: Mix everything together and mix it well.


ps: It will look nicer in martini glass

Krabby Patties

Ingredients

Crab meat
Mayo
Black pepper
Lemon juice
Bread crumbs
Oil to fry

ps: there's no specific measurements

Methods:

Mix all the ingredients in a bowl. Mix well.
Shape it into patties you desire.
Pan fry it till golden brown.
Serve it with thousand island sauce.
