Kachang Phool

Recipe taken from my ibu ... 1st attempt ... bau je lebih hahha but den again ok lar cos the portion my mom suruh agak2.

Kachang phool (dalam tin)
bawang putih
halia
lada kering
ketumbar jintan
air 
garam
minyak sapi
bawang besar
lada idup
telor

Kisar bawang putih, halia and lada kering.
Ketumbar Jintan sangar dan kisar
Kachang phool kisar kasar.
Goreng barang dikisar (bawang putih, hali and lada kering sampai garing)
Masokkan Ketumbar Jintan
Masokkan kachang phool dan air sikit masak sampai pekat
Garam secukup rasa
1 sudu besar minyak sapi
Serve with telor mata lembu, bawang dadu dan lada hiris

Fried Spaghetti Tom YUM

My cousin smsed me in the morning informing me that she will reached at noon.  I was like YIKESSS i forget to thaw the meat for my bistik!!!! how ... how... I woke the ONE up, we went Rivervale Plaza to get some of the out of stock ingredients ... hee hee and had break fast at Mcdonalds... Yummeeeh ...

The ONE suggested tom yum .... AGAIN ... oklah tom yum pun tom yum lar ... so here is the recipe.

Spaghetti with White Sauce and Iced Jelly

I've decided to cook 2 dishes cos I worry that my guest cant take the heat ... so white sauce for non spicy guest =D ....



Fareha asked how I cooked the white sauce ... here goes the recipe

white sauce (comes in bottle or can)
1 onion (diced)
4 garlic (minced)
EVOO
1 tbsp butter (optional)
1 chicken cube
black pepper
oregano
mixed herbs

optional:
sliced mushroom
chicken breast (cubes)
hot dog (sliced)
crab meat (sliced)

Directions:
Heat up EVOO (Extra Virgin Olive Oil) and butter.
Saute Onion and Garlic till soft
Add Chicken cube
Add Black Pepper, Oregano and Mixed Herbs
Add the optional item stir well
Add the White Sauce, boil it for 5 to 8 mins ... Done




I bought the instant jelly in pkt ... add water and boil till thinkens put in a mould let it set and put in refrigerator.  Mix with can fruits ... ta-da ...

Sabsuka-aaaaah

Orite today is the day i completed my 6-day fast. whooohoo ... Slamat Hari Raya to Me =D
i tot of cooking rendang and ketupat but some of the ingredients are not available... so i decided to cook sabsuka and improvise it a lil since some of the ingredient is not available too ... actually im just lazy to go NTUC lar.

Ingredients:


1/2 kg minced meat (i used thinly sliced beef)
1 cinnamon stick
1 large onion (diced)
1 large onion (blended)
2 cloves garlic (blended)
1/4 thumb ginger (blended)
1 bowl of chili paste
2 tbsp ground cumin
1/2 bowl tomato sauce
2 tbsp sugar
1 bowl tomato paste
2 tbsp chili sauce
2 tomatoes (diced)
2 cups water
1 tbsp Ghee (i used EVOO)
Black pepper powder
Coriander leaves
 fried shallot

Directions:

Mix the onion, ginger, garlic and black pepper powder to your minced meat leave it to rest.
Heat cooking pot and fried the chili paste and cinnamon stick. About 5-10 mins add in your minced meat (which i used sliced meat - time to cook a lil bit longer).
Add in diced onions, tomato paste, chili and tomato sauce, cumin powder and water
Once the minced meat half-cooked, add Ghee (i added EVOO). For garnishing add in fried shallot and coriander leaves.
Serve fried egg with Sabsuka or either mix it in the Sabsuka (individual preference)

Tempeh Campak-campak?!

today i tot of cooking kachang pool. dah mintak recipe from my ibu lagy sey but NTUC @ Sengkang tak sell foul medames. haiz
bump into yana hee hee ... so near yet so far ... y i said so cos we stay few bloks away but the last time i saw her and hubby was on the ONE's bdae which was before raya 6th sep ... it was horrible sey cos i din notice kalau yana tak tego i haiz ... the ONE always has my mata tarok kat lutut hahahah ...
ok time to panic cos i dun have a backup plan ... oklar end up i settle for tempeh almaklum saya jawa per ...
erm ok i just create it along the way lar eh ...


Ingredients:
tempeh (sliced)
onion (sliced)
garlic (chopped)
blended chili
curry powder
su'un
fish cake
oyster sauce
salt
black pepper

Directions:

Marinate the tempeh with chili curry powder and abit of salt.
Deep fry it, and put aside.
Heat pan with oil enuf to stir fry, add garlic and onion saute
Add su'un and fish cake. too dry - add in abit of water
Season with salt and black pepper.
Add the fried tempeh ... mix well
Accompany it with hot steamed rice .... YUM ... simple home cook food

Bihun Goreng Tom YUM

Had a great weekend.  The ONE invited colleagues and fwenz over.  So I decided to cook something simple.  To note no beef and non spicy... erm dats very hard hahahah ... anyway I just settle for something fast and simple lar.
My first guest was my uncle and family.  We watched the Grinch ... so takde link hahahha ... nothing nice on tv ar ... anyway I'm abit tired lar to story so we just go to the recipe eh ...


Ingredients:

1 pkt bihun
1 onion (diced)
5 cloves garlic (minced)
1/2 thumb ginger (minced)
1 scoop blended chili
kafir lime leaf
lemon grass (bashed)
2 tom yum cubes
2 tbsp tom yum paste
coriander
salt
black pepper

optional*
fishcake
crab stick
hot dog

Directions:
Put bihun in a pot, pour hot water and let it soaked for 15mins, once its soften strain the water and put aside
Heat wok with oil enough to saute
Add garlic and ginger, saute it for a few mins
Add diced onion cook till its soften 
Add kafir lime leaf and lemon grass 
Add in the blended chili cook till its changes a darker colour (hee hee not burn ok)
Add in the tom yum cube, tom yum paste, coriander
Season it with salt and black pepper
Add the optional ingredient
Add in the bihun, mix well.

Bread Pudding and Baked Pasta

i'm so excited!!! ibu came just now with her fwen and oyin... weeeeee... i had planned before hand wat to cook.  she loves bread and butter pudding... so i have decided to make dat which i google the recipe from allrecipes.com heehee ... 
i had a few guests, while breaking fast my second bro and galfwen came... ha ha they lost their way cos im not a very good directory =D ... after dat the ONE wen to pick up my mom, her fwen and my lil bro.  they reached abt 8.30pm.  not too long after dat my aunt and family came. din get to take picha cos too busy hahah ... anyway ... here are the end product. i've done this recipe before ... a couple of times, chances of me panicking less den 5% lar ... 





Ingredients (ive double the portion)

  • 6 slices day-old bread
  • 30 g butter, melted
  • 80 g raisins (optional) i replaced it with semi chocolate chips
  • 4 eggs, beaten
  • 475 ml milk
  • 150 g white sugar
  • 2 g ground cinnamon
  • 5 ml vanilla extract

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Break bread into small pieces into an 8 inch square baking pan. Drizzle melted butter or margarine over bread. If desired, sprinkle with raisins.
  3. In a medium mixing bowl, combine eggs, milk, sugar, cinnamon, and vanilla. Beat until well mixed. Pour over bread, and lightly push down with a fork until bread is covered and soaking up the egg mixture.
  4. Bake in the preheated oven for 45 minutes, or until the top springs back when lightly tapped.






Ingredients

1 large onion (diced)

4 cloves of garlic (minced)

1/2 thumb of ginger (minced)
2 tbsp of blended dried chili
500g of minced meat
salt
pepper
black pepper
pasta of ur choice
cheese

optional items
capsicum (diced)
sliced mushroom
sliced tomatoes

Directions



  • heat pot with water, a bit of olive oil and a pinch of salt.  
  • once boil, add in the pasta.  cook it to al dente stage.  
  • drain out the water and transfer the pasta in a bowl of ice to stop it from further cooking.  
  • put it aside
  • heat pan with a bit of oil to pan fry.  saute the diced onion garlic and ginger.
  • add in minced meat, cook till it changes colour
  • season with salt and pepper 
  • add in blended chili
  • cook it dry
  • add black pepper and off the heat
  • add optional items if u wan to and mix well den add the pasta
  • put it in a greased pyrex and cover it with mozzarella cheese
  • bake it in 190c oven for 30mins or till all the cheese melts and turn golden brown
  • serve it hot to have the stringy effect of the melting cheese

Eid Mubarak

Beef Rendang and Sweet n Sour


I am being fair so I tried both recipes 1 from my mom and the other from my MIL.

Sweet and Sour (which I accidentally put way too much chili that makes it look like sambal instead but taste sweet and sour still.

Ingredients:
*Garlic
*Ginger
*Onion
Dried Chili
*Blended everything
Tomato sauce
Sugar
Salt
Corn flour

Method:
Saute the blended stuff
Season with Salt and Sugar
Thicken it with corn flour.
ps: I used fried nugget with the sweet n sour sauce ... meat option is all up to u, fish oso can/

Rendang (MIL's recipe)

Ingredients:
20 chili padi
1 large onion
1/2 thumb of ginger
6 cloves of garlic
blend all the ingredients above

2 scoops of blended chili
1kg of beef (daging goreng)
2/3 of coconut milk (small)
2 cups of water
2 tsp salt
2 stix of lemongrass (bashed)
2 to 3pcs of lime leaves
1 tbsp sugar

Methods:
Heat the oil in a stew pot, add the blended paste and stir-fry them until aromatic.
Add the beef and the pounded lemongrass and stir for 1 minute.
Add the coconut milk, water and simmer on medium heat, stirring frequently until the meat is almost cooked.
Add the lime leaves and  sugar, stirring to blend well with the meat.
Lower the heat to low, cover the lid, and simmer for 1 – 1 1/2 hours or until the meat is really tender and the gravy has dried up.
Add salt to taste. If not sweet enough, add more sugar to taste.

Baking Mayhem Part IV

Almost Famous Cookies taken from Kak Rima. Awesome recipe I loike.




Ingredients
250g salted butter,softened
200g light brown sugar
1/4 tsp salt (i didnt add)
1/2 tsp coffee oil
1 egg
1 tsp vanilla extract
1/4 cup oats,processed to bits in a chopper (i used ground cornflakes)
1/4 cup ground almonds
1/2 cup of your favourite nuts,chopped finely (optional)(i used chopped walnut... toasted)
1 pack of Nestle Tollhouse semi-sweet chocolate chips
300g self-raising flour (i used plain flour with 1/2tsp of baking powder)
Method
This is the most important step,at least 2 hours before,or the night before,beat the egg with the vanilla and the coffee oil to infuse or you can do this the night before,refrigerate it then bring it to room temperature before baking.
Preheat oven to 160C.
To the softened butter,beat in the sugar and the salt to combine. Beat in the egg and stir in the processed oats,ground almonds,optional chopped nuts and the chocolate chunks. Sift the flour and fold it in,this dough will not be too stiff but not too wet either.
For small cookies,place half-tsp of the dough,spaced slightly apart on the cookie sheet and bake for 9 to 10 minutes.
For large cookies, place rounded tbsp of the dough spaced apart on the cookie sheet and bake for 20 to 22 minutes.
Cool completely and let it sit overnight in an airtight container,this is for the flavour and fragrance to develop further.

Putri Salat and Mee Kurnia

Celebrate the ONE's Birthday with his family members.  Lots of food for iftar.  We had Bihun Goreng Blackpepper, Fried Chicken, Fried Oyster Mushroom, Chocolate pudding, Bubur Hitam, Mee Kurnia, Putri Salat and Teh Tarik Ice-Cream and Holick Ice-Cream ... Ho .. Ho ... Ho...
This is my 3rd tries for putri salat ... it look better now hahaha and i used a diff recipe.  I tried mamfami recipe this time round.

Purple colour measurement is for small loyang
For the rice layer
Ingredients :

166g 500g glutinous rice ~ soak with a teaspoon of lime water (air kapur) for an hour [I soaked it overnite with tap water]
1 teaspoon salt [a pinch of salt]
[60ml coconut milk + 110ml water] 340 ml thin coconut milk
screwpine leaves ~ knotted

Method :

1. Wash the glutinous rice and put on a strainer.
2. Mix glutinous rice, salt, screwpine leaves and thin coconut milk.
3. Steam for 45 minutes till cooked.
4. With a fork, stir the cooked rice. Remove the rice onto another tray greased with a bit of oil and layered with a heat-resistance plastic.
5. Smoothen the rice onto the tray using a piece of banana leaf.
6. Steam for another 5 minutes.

For the top layer
Ingredients :

125g 250 g sugar
3 eggs 6 eggs (approximately 60 g each)
30g 60 g flour
5g 10 g sagoo flour or cornflour
375ml 750 ml thick coconut milk
a pinch of salt
1 tablespoon pandan paste
green coloring

Method :

1. Beat eggs and sugar till sugar dissolves. Make sure not to produce too much bubbles.
2. Add in flour, sagoo flour/cornflour and salt.
3. Pour in coconut milk, little at a time and stir till well combined.
4. Pour through a strainer into a pot.
5. Put on the stove and heat it just until you can see steam coming from the pot. Make sure to always stir the mixture slowly to avoid it becoming crumbly. Do not let it boil.
6. Poke the steamed rice with a fork so that the top layer can easily stick to the rice.
7. Pour the top layer mixture onto the rice and steam for 30 minutes.
8. Remove from steam and allow to cool before cutting.


Ingredient A
1kg Yellow Mee
1/2kg chinese mustard - wash thoroughly. i only used the leaves and top part of the stem. cut into bite-sized pieces.
1/4 cabbage - wash and slice. (i omit this )

Ingredient B 
*2 cloves of garlic
*3 red onions
*ginger *blend
2 tbsp dried chilli paste
2 tbsp soup spices (i bought kurma spice)
1 cube chicken stock
1 kg chicken wings, cut into bite-sized pieces
1 packet fishballs
1/2kg prawns, shelled and deveined
1 red onion, sliced
a thumb of galangal (bashed)
salt
pepper
oil

Garnish:
chinese parsley and green onions
fried shallots

Methods
1. heat up oil.
2. saute sliced onion and bashed galangal.
3. add the blended ingredients (onion, garlic and ginger)+ chili paste. fry till fragrant. add the kurma spice and mix well.
4. add chicken stock.
5. add in chicken, prawns, fishballs, salt, pepper.
6. add water to make gravy. bring to boil.
7. to serve put a serving of noodles and vegetables in a bowl garnish it with sprinkle of shallots and parsley and green onions.
 
this was taken from one of the asmah laili's mintak ampun sedapnya.. recipe books. it was recommended by my SIL.  Alhamdulilah it turned out well. hahah ...
