Yeah!!! Friday finally here ... yippiedooodeeey... NOT ... today things doesn't go my way and I hate it went it happened. Today not in a mood to cook ar so something fast and simple for dinner ...

Pizza-John?!

The plan was ... to cook bistik ... but a lot of stuff out of stock oleidie ... Lunch time I wen to Hong Lim temp market to get ginger, galangal, lemongrass, peas, tomato puree...... but oni ginger is available =S .... wen to Rivervale Plaza after work .... not much there too haiz ... so .. I ask ... you wan roti john or pizza???! ... and our PizzaJohn is born ... wakakaaka ... *lame*


Ingredients:
Bottom: Pizza Dough - Square Bread - French Loaf [watever u like]

Topping:
500g minced beef (if u wish to use other meat also can)
1 large red onion (diced)
2 to 3cm of ginger (minced)
4 to 5 cloves of garlic (minced)
salt and pepper/black pepper to taste
2 tbsp of oil/EVOO
Cheese

optional
**blended chili (with or without up to u)
sliced mushroom/diced tomato/diced capsicum/pepperoni ... the list goes on ...
in short ... u put watever u like lar ok.

Method:
Saute garlic then ginger den onion until swell.
Add in the minced meat, stir until all the meat change colour
Season with Salt and Pepper.
**If you wan it spicy this is the time to add blended chili 
(goreng sampai chili garing) 
**If u put chili den add in abt 2tbp of tomato sauce
Once the meat mixture is dry and cook through, off the heat
Add all the optional ingredients like mushroom, capsicum ..(mix well).. if dowan den dun need
Put a bit of topping on bread (of ur choice/pizza dough)
Top with cheese (I use shredded cheddar and Mozzarella)
Bake it with top this only once the cheese melted can take it out
(Use toaster oven is better but I dun have so i use oven with 175C top heat only)


I story abit ok (with my broken english). The first time I tried this recipe wen i was in sec 2 ... dat was 14yrs ago. This recipe has gone through alot of modification. Wen I was in school the recipe is very simple. Diced onion, minced meat, salt and pepper ONLY (shepherd's pie filling)... den it evolve ... hee hee ... I mix here mix there ... trial and error until I am satisfied with this recipe. This recipe is flexible can use it as a base for fried rice (which I intend to later today), or as popiah filling, or puff filling, or tart topping ...

Roasted Black Pepper Chicken with mayonnaise

This is my 2nd attempt to roast the whole chicken.  I do all my prep work the day before. So today just take out from the fridge and into the oven.  Lovely dinner for 3 =D. This recipe taken from kak rima's blog.





Crotons for the salad: Spread butter onto the bread, toast it.



Roasted Black Pepper Chicken with mayonnaise


Salad: I bought the ready pack ones in NTUC =D season with salt and black pepper. Add sliced pepperoni and cheddar 

Roasted Potatoes
Simply cut potatoes and carrots into 4.. add salt, black pepper, thyme, garlic and olive oil.. toss it and bake it together with chicken



Ingredients
1/2 chicken
1 tsp blackpaper (crushed)
2 cm ginger
2 garlics
1 small onion
1 tbsp honey
1 tbsp sugar
1 tsp sweet soy sauce
1/2 tsp salt
2 tbsp mayonnaise
a pinch of pepper

Method
Blend onion, garlic and ginger.. add the rest of ingredients except mayonnaise to form paste.
Marinate chicken with paste and add in mayonnaise
Let it sit for abt 3 to 5hrs
Bake chicken at 190C for abt 45mins

It's Monday and I'm home. Why is that???!! .. consumed way too much food and sweet stuff. Had tummy upset and vomit a couple of time. Feeling = Sucky.

Decide to cook something simple for today.  3rd recipe out of 365 ... Ayam masak Sambal Kicap.

Omelet Mushroom and Cheese

Ingredients:
3eggs
Sliced Mushroom
Salt
Pepper
Cheese

Directions:
Whisk and mix everything (except the cheese)
Melt butter on a hot pan
Put in the well mixture
Once cook put in the cheese and fold it into half  



Ingredients500g chicken1 lemongrass (bashed)
5 pcs lime leaves (tear into 2)
3 tbsp tomato sauce
5 tbsp sweet soy sauce
oilsalt to taste
Ingredients (to blend)20 dried chili
5 red onions
1 big onions
3 cloves garlic
2 cm ginger
1/2 cup water

Directions1. Clean and wash chicken
2. Heat pan with oil. Stir in the lemongrass to give aroma. Add in the blended ingredient
3. Once the blended ingredient is cook add in the chicken and continue till the chicken is fully cook
4. Add in lime leave, tomato sauce and sweet soy sauce.
5. Let it cook for 15 to 20mins

Vanilla Cupcakes

Suddenly felt inspired while watching MasterChef on TV. They made it looked so simple ... Some of the contestants don't even know how to bake (ah hah ... since they can do it ... i can do it too right??!! ...WRONG!!!!) I'm so excited ... and I decided to try my luck ... Did not turn out too good ... it turned out bad actually ... messy over flowing to the sides and due to that ... my cuppies all have holes in the center.
I feel lousy and sucky.


I took this recipe from allrecipes.


Ingredients

  • 125 g butter, softened
  • 125 g superfine sugar
  • 155 g self-rising flour (i used 111g flour, 4g baking powder)
  • 2-1/2 eggs
  • 4 ml vanilla extract
  • *i put toblerone

Directions

This recipe's Ingredients were scaled to yield a new amount. The directions below still refer to the original recipe yield of 1 dozen cupcakes.
  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 12 cup muffin pan or line with paper baking cups.
  2. In a large bowl, mix butter and sugar with an electric mixer until light and fluffy, about 5 minutes. Stir in the eggs, one at a time, blending well after each one. Stir in the vanilla and flour just until mixed. Spoon the batter into the prepared cups, dividing evenly. I put toblerone inside the better
  3. Bake in the preheated oven until the tops spring back when lightly pressed, 18 to 20 minutes. Cool in the pan set over a wire rack. When cool, arrange the cupcakes on a serving platter.

Pepperoni Pizza Puff

I stumbled upon this recipe while playing with my tumblr ... It looks simple and do-able hee hee ... its not huge ... a bite size pizza ... cool or waaaat ... so i decided to try it ... today or never hee hee ... hubby bought for me a mini muffin tray ... im so loving it ...

Ingredients
171g cup flour
3/4 tsp baking powder
200ml milk
1 egg
1 1/4 cup shredded cheese (I used cheddar and mozzarella)
4 ounces chopped pepperoni
Directions
1. Grease a mini muffin pan with nonstick cooking spray.
2. In a large bowl, combine flour, baking powder, milk, egg, cheese, and pepperoni, stirring until completely mixed.  Spoon batter into the prepared mini-muffin cups about 2/3 full.
3. Bake in an oven preheated to 400 degrees for 15-17 minutes. Serve while warm.

Ayam Gajus / Cashew Chicken

I wont give my hubby any reason not to buy me recipe book!!! wakakkaka ... last week i bought Hanie Liza recipe book from Popular, City Square (uhuh ... this recipe book is not available in Singapore so I have to go all the way to JB to get it) ... Hubby said that if I dont try anything from this book ... then it will be my last recipe book ... EVER!!! ... Tonite I tried 1/365 recipe from this recipe book. I follow this lady blog too.

I've decided on Ayam Gajus or direct translation Cashew Chicken.  Its the simplest and fastest recipe i can find in the book ... ta-da ...


Ingredient A
600 gm boneless chicken - cut into cubes
1 tsp corn flour
a pinch of salt
Mixed the corn flour, salt and chicken.  Pan-fry with about 2tbsp of oil.

Ingredient B
100 gm cashew nuts (hee hee i bought the ones in packet and ready to eat)
30 gm dried chili (snip it into 3 parts)
2 big Japanese Onions (diced)
4 cloves garlic (sliced)
2 inch ginger (sliced)
1 green capsicum (cut into cubes/diced)
3 tbsp Oyster Sauce
2 tbsp Tomato Sauce
1/4 cup water
Oil to stir-fry
Cara
1. Heat oil in the wok
2. Put in dried chili stir fry it till its a bit crispy and take it out
3. Saute garlic and ginger for a few mins and add in the onion (fry till soft)
4. Add in the capsicum, chicken, tomato sauce and a bit of water
5. Once the water reduce add in the cashew nuts and the off the heat
