Baking Mayhem Part II - Almond London

The ONE all time fav, almond london.  Every yr ibu will make a bottle of almond london for the ONE.  But this yr ibu is too busy with orders of fried mini popiahs and pineapple tarts.
So I decided to give it a shot.  Asked ibu for recipe
From this batch I manage to get 66 pcs of almond london.
Ingredients:
125g butter (diced)
75g icing sugar (sifted)
1 egg yolk
225 plain flour
300g toasted almonds
450 dark chocolate (melted) [I added 3 tbsp of milk choco]
crushed almond 

Methods:
Cream butter and sugar till light and creamy
Beat egg yolk (mix well)
Fold in flour
Mix it till it becomes a soft dough
Heat oven to 175c and toast almonds abt 10 to 12 mins.
Allow the almond to cool before covering it with the dough
Pinch dough of the size of a small marble.Roll to form a small ball.
Press an almond in the middle and cover the remaing to form an oval cookie.
Place in lined baking sheet and bake at 175c for 20 to 25 mins, until golden brown.
Allow to cool completely, before dipping the chocolate.
Double boil the chocolate to melt it.
Pop in the cookies one by one into the chocolate and use a small fork to place it into the paper cups.
Sprinkle almond nibs on top before the chocolate dries up.


the dough was soft and easy to manage. If its too soft pop into the freezer abt 15mins before you start working on it.  

66 BALLS of almond london =p

hee hee ... since i dowan it to be too bitter i mix it with white chocolate

I made changes abit here and there, on my creativity cap ... ta-da ...

Baking Mayhem Part I - Honey Cornflakes

Thanks to Nurul's mom for the recipe ... hee hee ... I'm always kancheong spider and klutz in baking but alhamdullilah weekend wen well for me.
For the 1st time I do baking alone with no supervision from my mom at my own kitchen ... I deserve a pat on my back =D 

Ingredients:
170g icing sugar
225g butter
1tbsp honey
400g cornflakes

Methods:
Put icing sugar, butter and honey in a pot, low heat, till thicken
Crushed cornflakes and mix well
Put in small cups
Bake in 175 degree oven from 12 to 15mins

ps: I add roasted chopped almonds, chocolate drizzle and colourful sprinkles





Over the weekend ... Busy Bee

Been busy over the weekend ... stress level slightly high.  Sat iftar at SIL's place Sun iftar @ Popeye Spore Flyer with Ida and Farik



I dowan to go to my SIL's place empty handed so I made clawpiah ... the name I just made it up hahahah ... its actually crab meat there no claw at all lar hee hee ... something simple and less time consuming.

Ingredients:
popiah skins
crab meat
mayo
salt 
black pepper

Methods:
 Cut the crab meat into 3 section, use fork to break it up
Add in mayo, salt and black pepper and mix well
Lay a piece of the Popiah skin on a flat board. 
Spread one teaspoon of the crab meat filling
Fold up the two sides of the wrapper and roll up
Deep fry it till golden brown and crispy
Serve it with sour cream and chili sauce

Weee.... JCO i had snow white YUM-O ... and Grande Ice Caramel Macchiato @ RC.

14 Ramadan 1431

I asked the ONE this morning ... You want Fried Rice or Mac 'n' Cheese ?!
So this what we had for iftar today.

This is called CHEATING Fried Rice. Why is it so cos .... I used sambal belachan from Hjh Maimunah hee hee ta-da!!!
Belacan from Hjh Maimunah
1 day old rice
Diced Onion
Sliced Chili Padi
Black Pepper
Chicken Cube
Oyster Sauce
Methods:
Saute onion and chili padi till soft
Add in the chicken cube till it dissolves
Add in the belachan, fry it for a few mins
Season it with salt and pepper
Add in the oyster sauce, stir well
Add rice. mix veggies optional
Mix well
Garnish with Fried onions


Roasted Baby Potates
Baby Potatoes
EVOO
Black Pepper
Salt
Thyme

Methods:
Mix all the ingredient in a ziplock back for 30mins
Roasted the seasoned potatoes for 40 to 45 mins in 175c oven

13 Ramadan 1431

I won't be posting any food photos today cos we had leftovers hee hee... still yummy ... abit of asam pedas ikan pari from SIL, abit of yesterday murtabak kraker, a whole lot of otah left by yana and fad and a few wings.

I've been blog hopping the pass few days and I salute some of the ladies who have passion in their cooking ... baking ... online business or anything lar. I would like to pay my tribute to some wonderful ladies that I've been following their blogs the pass few months... weeks ... and maybe days.

1. Kak Rima an awesome lady, shared her recipes and also there to answer some of my idiotic questions.  With a 2yr old pwincess she manages to bake almost everyday, fantastic.  Thou I'm a klutz in baking but I really want to perfect myself.

2. http://ieatishootipost.sg/2008/07/ieatishootipost-to-appear-on-sundays.html this doctor brings his camera everywhere for his food hunting and I like that, cos at times it feels awkward to shoot every time the food arrived hee hee.

3. Nurul introduced to me this blog http://www.hanieliza.blogspot.com/ last week. I was like waaaaaaaaaaaaaaaaaaah kakak nie ade buku lar ... I tried her pudding caramel lapis coklat didn't turn out too well hahah i think i must stay away from cake mixer and steamer ar.

4. I like this blog too http://rozzan.blogspot.com/. When I  don't have any idea what to cook, I can always browse rozzan's page sure got sometime nice to try.
