Bagedil Daging


Bagedil Daging

Ingredients:
Russet potatoes (I boiled it but if you want to fry also can, sliced and fry and mashed it)
1 pack of minced meat (I used beef if you want to you minced chicken or prawn also can)
Eggs
Fried shallot (store-bought)
Chopped coriander leaves
White pepper
Salt 
Oil for frying

Methods:
Fry minced beef without oil and put aside.
Boil the potatoes till soft and mashed it. (oppss drained the water first before mashing.
Add fried shallots, chopped coriander leaves, pepper, salt into the mashed potatoes.
Mix it together and roll it into a ball and flatten it.

Whisk egg with folk. Coat the bagedil in the egg and fry till golden brown.

Bistik Daging

It's the first weekend of the fasting month. And MIL was at home so we break fast at home lah. Since the other days we broke fast at the mosque nearby.  

Ask the Mister what he wants to eat and he said anything to eat with bread.  How simple! Woke up early to prep and started cooking after asar.  The taste was quite mile no kick.  Maklumlah puasa tak boleh rasa =p.

But can better if can taste while cooking I would have alter the flavour lah.  I did some Google-ing and I like Tiffinbiru's recipes. Easy and hassle free though I made some changes to the recipe to suit may laziness hahaha.


Ingredients:

500g minced meat or sliced meat
5 potatoes
Black pepper
1 cinnamon stick
Blended dry chilli
Salt and sugar to taste
Peas
Water
Tomato sauce
Tomato paste
Beef stock

Blended ingredients:
                                  1 onion
                                  6 red onions
                                  3 cloves garlic
Oil for frying

Method:

Season the meat with black pepper and salt and put aside.
Heat oil. Throw in the cinnamon stick and the blended ingredients.
Add the potatoes and mix well.  Add water cook the potatoes till half cook.
Add in the meat and tomato sauce, blended chilli, tomato paste, and beef stock.
Mix well and cover the pot with low heat till the meat and potatoes are cook.
Season with salt and sugar cook till gravy thickens.
Garnish it with peas, fried shallots and chopped coriander leaves with sliced French loaf.

Roasted Garlic Mashed Potatoes


Garlic Mashed Potatoes by Alton Brown [Mine is in Maroon]

Ingredients
3 1/2 pounds russet potatoes
2 tablespoons kosher salt
16 fluid ounces (2 cups) half-and-half
 [I used fresh milk]
6 cloves garlic, crushed
 [I baked the garlic with EVOO for 20mins in the oven]
6 ounces grated Parmesan

Butter

Heat the half-and-half and the garlic in a medium saucepan over medium heat until simmering. Remove from heat and set aside. 
[Put crushed garlic on the aluminum foil.  Drizzle with EVOO and salt.  Baked it for 20mins]

Remove the potatoes from the heat and drain off the water. Mash and add the garlic-cream mixture and Parmesan; stir to combine. Let stand for 5 minutes so that mixture thickens and then serve.

Mee Soto

Our house was officially opened last friday.  Yup it was almost a week, still have not gain my energy back.

Mee Soto

Ingredients:

1 (1.75kg) chicken
6 cups water
salt to taste
600g fresh laksa noodles
300g bean sprouts, tails removed

Grind into a fine paste:
1½ tbsp coriander seeds
1 tsp cumin seeds
1 tsp fennel seeds
1 stalk lemon grass, sliced
1 thick slice lengkuas
4 candlenuts (I don't have this)
8-10 shallots
1 tsp white peppercorns

For garnishing:
10 shallots, cut into fine slices and fry till golden brown
spring onions and celery, finely chopped
potato cutlets, fried
shredded chicken

Chilli Padi Sauce:
¼ cup birds-eye chilli, wash and remove stalks; grind fine and pour some dark soya sauce over it.

ilah: 4 red chili, a handful of chili padi, 5 cloves of garlic, kichap manis, 5 lime juice.  Blend everything and taste =)

Method:
  • Put whole chicken, ground paste, water and salt in a large pot. Bring to the boil. When boiling, remove chicken and keep stock aside to use as soup for the Mee Soto.
  • Put the chicken on a tray and roast for about 20-30 minutes at 190°C (375°F) until light brown. Shred chicken when cool.
  • Bring a large pan of water to the boil. When water is actively boiling, put in noodles and bring back to the boil. Continue boiling till noodles are cooked, then remove noodles.
  • In the same water, scald the bean sprouts.
  • To serve: Put the noodles in a dish, sprinkle bean sprouts and shredded chicken over it then add soup and garnishing. Serve with Chilli Padi Sauce.

Begedil
Ingredients:

2 medium-sized russet potatoes
¼ cup cooked minced beef (seasoned with a little cumin or just salt and pepper)
¼ cup crispy fried shallots
¼ cup spring onion, sliced thinly
2 eggs
¼ teaspoon salt
½ teaspoon ground white pepper
oil for frying
Peel and boil the potatoes. Mash the potato and add the beef, shallots and spring onion. Season with the salt and pepper. Mix well and shape into balls about 2 inches wide. Roll the balls well between your palms to ensure that the patties are compact and will remain intact when frying. Press the balls so they flatten a little on two sides. At this stage, you can freeze them. Do not defrost when you are ready to eat them - fry direct from the freezer.

Beat the eggs in a bowl. Heat oil to medium heat. Dip each patty in egg before frying them. After about 3-4 minutes, turn them over and fry until golden brown.

Makes 18-20.

The Shepherd's Pie


Not your normal Hari Raya dish but my mom requested for 2 medium trays of shepherd's pie.  

I also have some friends asking for this recipe ... I like to make changes from time to time cos there's no right or wrong shepherd's pie.  This recipe has gone a lot of changes ... in school, Secondary 2 to be exact, it was a super basic pie ... its just potatoes season with salt and pepper, filling was minced chicken, onion, garlic, salt and pepper and abit of butter to finish off ...

So you see this recipe has evolve for the passed 16yrs ... and I kept adding more ingredient to the recipe ... to make it AWESOME!

  • Boil potatoes for 1 to 1 1/2hr depending on the quantity and size of the potatoes
  • Once cooked, drained and peel the jacket (if you boil together with the jacket). Season with salt and pepper.  Butter and milk are optional. Mashed and mix till smooth or leave bits and pieces of chunks are ok too.

Potatoes:
potatoes - use russet potatoes (scrub clean and boil with jacket on til cook)
salt and pepper to taste

  *Optional
soft butter
milk
parmesan cheese


  •  Minced meat (I used beef - the choice is yours)
  • Garlic and ginger - chop, onion - diced
  • *Optional - Tomatoes, capsicums, mushroom (put can, don't put also can, put other things also can)


  •  Seasoning - Tomato sauce, salt, pepper, black pepper
  • *Optional - Blended chili
  • Oil to fry


  • Sautee garlic, ginger and onions
  • Once soft add in the minced meat
  • Mix well
  • The liquid will come from the meat cook til the liquid dry up


  • Season with salt and pepper
  • Continue to cook it for 5mins
  • *Optional - add blended chili (can omit) and cook it for 10 to 15mins or until its well cook [add black pepper once its half way cook]

  •  Off the heat
  • Add tomato sauce and the *Optional ingredients such as tomato, capsicum and mushroom
  • Mix well and put aside ... let it cool before use

Use a good quality Mozzarella Cheese!


  • grease aluminum tray, pyrex or oven-prove dish with butter.
  • take 1/2 of the potato mixture and line the bottom of the dish
  • then take a generous amt of filling and layer it on top of the lined potato mixture
  • cover it with mozzarella cheese
  • take the remaining mixed potatoes and cover the filling
  • dot the top with butter (I have none left hahha)
  • add generous amt of mozzarella cheese on top.



Bake it for abt 10min on a pre-heat oven of 190C or until the cheese has melted and turn golden brown

Sleepover - Games - Movie Marathon

Over the  weekends we had sleep-over session with some friends ... Played Jenga ... Uno ... watched movies ... and lots of food from peanuts to chocolates ... popcorns and ice-creams!

I baked Cheesy Mish-Mash for the 2nd time.


Ingredients:
Fried Wedges
Cooked Minced Meat
Pan-fried Turkey Bacon
Pizza Plus Cheese

Method:
Deep fry wedges / Cook Minced Meat / Pan fry Bacon and cut into bite size.
Mix everything season with salt and pepper and a tsp of oregano.
Put in a grease proof pyrex dish and cover it with mixture of cheese.
Bake it for 15 to 20mins once the cheese melted and golden brown.

A super long Jenga session ... 32 stories high ... on a lazy susan ... 


They bought me Dr Marten, Mary Jane's Shoe!!! for my birthday.... I love it.


Morning Breakfast we had Nasi Lemak... (Smell bunch lol)



Ingredients (My mom's version)
Rice
Coconut Milk
Salt 
Ginger (bashed)
Lemongrass (bashed)
Pandan leaves (a knot)

Method
Wash the rice properly.  Add all the ingredient mix well.

Sambal Tumis
Blended Dried Chili
Belacan (toasted and grind)
Blended Garlic 
Blended Onion
Sugar
Asam juice
Oil for frying

opt*
Ikan Bilis
Prawn
Egg
Peanuts

Method
Heat oil, fry chili, onion, garlic and belachan (low heat for 30 - 45mins) with constant stirring. 
Add asam juice cook it for 5 to 10mins.  
Add Sugar.  Let it boil for a while and off.
Add the item of ur choice (ikan bilis, prawn, egg, peanuts, fishballs) or u can choose to leave it empty.

Shepherd's Pie (Chicken)

Pot-luck during lunch.


Potatoes:
Boiled a bag of russet potatoes
Roasted garlic
Butter
Salt
Pepper
Milk

Method:
Boiled potatoes with a dash of salt. While waiting for the potatoes to boil, roast some garlic. Roasted garlic: put on the aluminium foil, drizzle olive oil, salt and pepper. Bake at 200C for 45mins.
Add boiled potatoes, roasted garlic, butter season with salt and pepper. Mix and mash well.  Add milk if its too dry.

Chicken filling:
Minced meat or Chicken breast cuts into cubes
Sliced Mushroom
Diced Onion
Minced garlic
Salt
Pepper
Oyster Sauce
Olive Oil

Method:
Saute garlic and onion.
Add meat season with salt, pepper and oyster sauce
Cook for 5 to 8mins.  Add mushroom mix well and off the heat and put aside to cool.

Butter
Mozzarella Cheese

Method:
Greased the oven-proof dish with butter.
Placed 2 big scoops of mashed potatoes in the dish and level it.
Add in the filling.
Over the filling with the mashed potatoes.
Dot melted butter and sprinkle generous sum of mozzarella cheese.
Bake in 250C oven till its golden brown.

German Potatoes

I have fine tune the recipe hee hee ... cos normal German Potatoes are quite bland. So I decided to add seasoning here and there  and by baking it in the oven makes the bacon more crispy ...

Ingredients


Potatoes
Canola Oil
Butter
Garlic (minced)
Paprika
Onions (diced)
Turkey Bacon (cut into bits)
Salt & Black Pepper

Methods:


Heat up oil and saute Turkey Bacon
Take the bacon out.  Use the bacon dripping add butter and saute garlic and onion still lightly brown
Add in potatoes (u may choose to half boil it) season with salt, pepper and paprika
Add in the bacon bits and mix well

For me I do the balance cooking in the oven

Took half day yesterday to cook up a storm.  Storm abis ... anyway I did not get anything for E this year ... Sad eh ...

I have been planning for this dinner for quite sometime.  Since he's been asking me to cook the Jamaican Chicken ( he saw Nigella cooked on tv) so I took down the recipe.  To company the chicken I cooked  German Potatoes which I got recipe from Mrs Farik and as for the Shrimp cocktail I stumbled upon it a few days ago. As for the 'burnt' Rich Oreo Chocolate Brownie I got it from Kak Rima @ www.bisousatoi.com.

Italiano - Bon Appetito!

Its not official lar but we (nurul, yati and me) tot that it would be nice to cook and eat together once a month.  Not only we cook and eat, we also share the experience. Today's lunch was awesome! Thanks to Nurul and Yati for their lovely dishes.  Not only that we got to share with some of our fwenz in office.  we can't afford to share with everyone ... perhaps ... next time lar ... hee hee

Very Flavourful Baked Mushroom by Nurul

Here's the recipe for Baked Mushroom

Preparation time: 15mins
Total cooking time: 15mins
Serve 4


Ingredients:
250g (8oz) button mushrooms
200g (6 1/2oz) oyster mushrooms
200g (6 1/2oz) shiitake mushrooms
100g (3 1/3oz) swiss brown mushrooms

Toppings:
1 cup (80g) fresh breadcrumbs
1/4 cup (25g) freshly grated parmesan cheese
2 tbsp chopped fresh flat-leaf parsley
1 tbsp chopped thyme
2 cloves garlic, crushed
1 tsp cracked pepper
2 tbsp extra virgin olive oil

Method:
Preheat oven to moderate 180C.  Wipe the mushrooms with damp paper towel. Trim away the hard tips and discard.  Cut any large mushroom in halflengthways

Sprinkle the base of a large baking dish with a little water.  Place the mushrooms in a single layer in the dish, stems upwards.

To make Toppings: Mix together the breadcrumbs, parmesan, herbs, garlic and pepper, sprinkle ove the mushrooms and drizzle with oil.  Bake for 12 - 15 mins and serve warm.

C O O K ' S   F I L E
Note: Use day-old bread which slightly stale to make breadcrumbs.  Simply remove the crusts and chop in a food processor until the crumbs form.
Hint: Always wipe mushrooms clean with a damp paper towel - washing will make them soggy.



Nice, light and flavourful broth: Zuppa Seafood By Yati
Here's the recipe for Zuppa Seafood

Ingredients:
200g (7oz) squid tubes
4tbsp olive oil
1 onion, finely chopped
1 celery stalk, finely chopped
1 carrot, finely chopped
2 garlic cloves, finely chopped
15g (1/4 cup) roughly chopped parsley
pinch of cayenne pepper
1 fennel bulb, trimmed and thinly sliced
125ml (1/2 cup) dry white wine omitted
400g (14oz) tin chopped tomatoes 
1.5L (6 cups) fish stock
300g (10 1/2 oz) fish fillets, such as red mullet, monkfish, cod, deep sea perch
250g (9 oz) scallops, cleaned
12 prawns (shrimp)

CROSTINI
3 tbsp extra virgin olive oil
2 garlic cloves, crushed
4 slices 'country-style' bread, such as ciabatta

Method:
Place the squid flat, with the skin side up, and score a crisscross pattern into the flesh, being careful not to cut all the way through. Slice diagonally into bite-sized strips.

Heat the oil in a large saucepan and cook the onion, celery, carrot, garlic and chopped parsley over moderately low heat for 5-6 mins, or until softened but not browned.  Add the cayenne pepper and season well.  Stir in the fennel and cook for 2-3 mins. Add the white wine, increase the heat and cook until it has been absorbed. Stir in the tomatoes, then add the fish stock and bring to the boil.  Reduce the heat and simmer for 20 mins.

Add the squid to the pan with the fish pieces and simmer for 1 min. Add the scallops and prawns and simmer for another 2 mins. Taste and add more seasoning if necessary.

To make the crostini, heat the olive oil and crushed garlic in a large frying pan over moderately low heat.  Add the slices of bread and fry on both sides until golden.  Place a slice of bread into each of four warmed serving bowls. Ladle the soup on the top and serve immediately.


Shepherd’s Pie
Ingredients
  • 1 big red onion (diced)
  • 4 cloves garlic (minced)
  • 300g ground beef
  • 30 dried chilli (soaked and blend)
  • ½ packet frozen mixed vegetables
  • 10-12 button mushroom (sliced)
  • Bell peppers (red, green and yellow) diced
  • 2 tbsp tomato sauce
  • Mozzarella cheese
  • Salt and white pepper/freshly ground black pepper
  • 8 to 10 medium potatoes
  • 250ml milk
  • 250g butter
Directions
Potato: Wash potatoes thoroughly.  Cook in boiling water until tender. Mashed potatoes, add milk, butter and season with salt and pepper. Mix well. Adjust thickness by adding more milk, if desired.

Beef: Saute onions and garlic. Add ground beef. After beef is browned, add blended dried chilli.  Cook till dry, add salt and black pepper to taste.  Add tomato sauce and mix well. Off the heat. Mix in vegetables, sliced mushroom and bell peppers.

Preheat oven to 350 degrees F after 10 mins change to top heat only.
Grease butter on pyrex or any similar casserole dish. Layer half way up with the mashed potatoes. Next, spread the beef mix on top of potatoes. Layer a handful of mozzarella cheese. Cover it with mashed potatoes.  Dot butter on the potatoes and sprinkle generous amt of mozzarella cheese.  Bake for approximately 10 to 15 minutes until top is golden brown.

This recipe is special to me cos, it was given by my Secondary School teacher when we were doing our Food & Nutrition class.
I like this recipe cos I have improvised and change some of the ingredient to make it my own.  And I also make it richer in flavour.

Gotta Cheer myself up... NEED happy food

This week has been a hectic week for me... work is flowing in so i got to jot down wat i need to do ... i worry i will forget it and all the date lines, home is not easy either - stuff dat i need to do ...i need to improvise my cutlery drawer cos the drawer under the stove is not working for me any suggestions??! ... ibu keep nagging at be about her toilet door ... oyin with ibu problem ... ahnaf with job hunting ... they are driving me nuts ... so ytd i decided to do something da make me happy lar ....

Rosti ... it was introduce to me by Yana somewhere in 2008. i made it once but cant remember the outcome so i decided to try again. Ouh yah ... i think its best to use russet potatoes more lemak ... this time round i used new potatoes it tasted sweet wen caramelized hahhah ... so i think russet potatoes is a good choice for Rosti. And i kind of improvised yana's recipe abit.

Ingredients
Half boiled potatoes (I did not boil I like the al dente texture)
Salt
Black pepper
Chopped parsley
EVOO (your choice ghee/butter/veg oil)

Method
You can choose to half boil the potatoes and grate it or you can just grate it raw in a bowl.
Season with salt and pepper.  I also add chopped dried parsley from the bottle.
Mix well and squeeze the excess water.
Heat up the frying pan with EVOO (Rachael Ray is my idol so i use EVOO hahaha )
Don't have to wait for it to sizzle cos it will be smoky. put in the potatoes and flatten it in the pan shape itself... 3 to 5 mins on each sides fry it till golden brown ... place it straight on a plate do not put on a kitchen towel ladies cos it will stick aite ... garnish, up to ur own creativity ok ... sausages, mayo ... go crazy ahhaha ....


My 1st attempt ... looks good!!!! ... so excited cos it poofs upwards hee hee ... in the aluminum cups doesnt have the same texture so remember to use ramekins ok. Lovely ....







I dust it with icing sugar and accompany it with vanilla ice-cream and a drizzle of chocolate fudge.

I got this recipe from cooking for engineers ... cute rite. 

Dark Chocolate Soufflé (serves two; recipe can be doubled) 
Preheat oven to 375°F (190°C) and prepare two 6 oz. (180 mL) ramekins with butter and sugar
4 oz. (115 g) 70% cacao chocolatemelt in double boilerwhiskfold in egg whitespour into ramekinsbake 375°F (190°C) 15 min.
1/2 Tbs. (7 g) butter
1 oz. (30 mL) heavy cream
2 large egg yolks
2-3 large egg whiteswhisk to soft peakswhisk to stiff peaks
a dash (1/16 tsp.) cream of tartar
1/6 cup (35 g) sugar


Since I do not have any baking chocolate at home ... I use Cadbury Duo from NTUC and it works just as nice.

Roasted Black Pepper Chicken with mayonnaise

This is my 2nd attempt to roast the whole chicken.  I do all my prep work the day before. So today just take out from the fridge and into the oven.  Lovely dinner for 3 =D. This recipe taken from kak rima's blog.





Crotons for the salad: Spread butter onto the bread, toast it.



Roasted Black Pepper Chicken with mayonnaise


Salad: I bought the ready pack ones in NTUC =D season with salt and black pepper. Add sliced pepperoni and cheddar 

Roasted Potatoes
Simply cut potatoes and carrots into 4.. add salt, black pepper, thyme, garlic and olive oil.. toss it and bake it together with chicken



Ingredients
1/2 chicken
1 tsp blackpaper (crushed)
2 cm ginger
2 garlics
1 small onion
1 tbsp honey
1 tbsp sugar
1 tsp sweet soy sauce
1/2 tsp salt
2 tbsp mayonnaise
a pinch of pepper

Method
Blend onion, garlic and ginger.. add the rest of ingredients except mayonnaise to form paste.
Marinate chicken with paste and add in mayonnaise
Let it sit for abt 3 to 5hrs
Bake chicken at 190C for abt 45mins

my Precious off in lieu

I woke up feeling so excited ... cos I have lots of plan today. Its been a while since I really cook ... so today I google for some recipes. Set ... went to market and back. So I decided to try Chicken Fried Steak, Pasta Salad and Baked Mashed Potatoes. Here go nothing ... hee hee ...


Chicken Fried Steak Cuban Style


  • Ingredients
  • 4 (4 ounce) cube steaks
  • 2 eggs
  • 3 cups dry bread crumbs
  • 1 tablespoon dried oregano
  • 1 teaspoon ground cumin
  • salt and pepper to taste
  • 1 lemon, sliced
  • 2 cups vegetable oil for frying

Directions

  1. In a shallow dish, combine the breadcrumbs with the oregano, cumin, and salt and pepper. Beat eggs in another shallow dish. Dip each steak in beaten eggs, and then in the breadcrumb mixture. Make sure to cover each steak well with the breadcrumb mixture.
  2. In a large, deep skillet, heat 1inch oil over medium high heat.
  3. Place the steaks in the oil when it's hot (so that the breading will not stick to the pan). Cook steaks, turning once, until brown for well done and golden brown for medium. Serve with lemon slices.



Baked Mashed Potatoes (I tried to replicate popeye's mashed potatoes)

Ingredients
Potatoes (clean, peel, boiled with chicken stock)
garlic (roast with olive oil)
minced chicken (pan fry)
Salt and Pepper
Butter

Directions

  1. Boil potatoes in chicken stock and mashed.  add butter
  2. roasted garlic mix with the mashed potatoes
  3. season with salt and pepper
  4. add minced chicken
  5. mix well
  6. put in casserole and bake for 10 to 15mins


Pasta Salad

Ingredients
Pasta (boil)
Chicken Breast (boil)
Mayo
Lemon
Parsley
Crab stick
butter
olive oil

Direction

  1. Everything put in a bowl and mix.
  2. Put in the refrigerator.
  3. Serve cold
