Kachang Phool or Foul Medamez

This is my ibu's recipe.  I try to put the quantity but this is agak-agak hor.  If you like but more don't like don't put lor.  Don't stress! Don't stress!
It's a very last minute menu as my sister in law is coming to visit after magrib.  Since ibu provide me some of the ingredients and others can be found in my fridge oklah. This is not my first time cooking kachang phool but this is the 1st using ibu recipe.  Much lesser ingredients.  Fast and easy but hate the splatter-splatter it made when boiling.  I burnt my left palm. -_-'' pandai sangat tu namenye.

Kacang Phool

Ingredients:
3 cans Foul Medames (supplier ibu)
2 tbsp powder coriander seeds
1/2 tsp powder fennel seeds
1/2 tsp powder cumin seeds
tomato sauce (to your liking)

Ingredients to blend:
Onions
Garlic
Dried chillies

Garnishes:
Diced onions
Sliced green chillies (supplier ibu)
Limes, halves (supplier ibu)
Sunny side up
Bread

Methods:
Heat pot (use pot better cos it will splatter here and there).  Add in the powdered ingredients for 1-2 mins.  Pour in the blended ingredients, fry it till the oil floats.  Coarsely blend the foul medames.
Add in the coarse foul medames.  Stir and season it with salt and tomato sauce cook till it bubbles up and off the heat.
Serve a place of kachang phool with some diced raw onions, afew sliced of green chillies, squeeze half or 1 lime and a sunny side up and a few sliced of toast or French loaf. (I fry some but I don't put on my plate)

Nasi Sambal Goreng

It's Friday! It's Friday! It's finally Friday!  I am excited much cos I'm challenging myself to a heavy ifTHOR (yup I still couldn't let go of THOR!!!) Heeh...

So today is the quest of cooking Nasi Sambal Goreng.  I think its the husband  favourite.  Erm I can't make out his expression. Anyway this NSG is alot of work sey.  I went cold storage during lunch yesterday.  Got some of the stuff I need.  After breakfast, I went to the cold storage at compasspoint (heh almaklum da raya) Disappointed okay supermarket so big run out of dried chillies, tempeh, fresh chicken breast and minced meat. So I took the train to NTUC to get the rest of the stuff. (Kecoh weeeei I went 3 supermarkets in 1 day sheeesh) and NTUC run out of TEMPEH!!!! ok I give up ... the sambal goreng shall have no tempeh.

So I when home and marinate my chicken and fry dry the mince meat and keep in the fridge.

Here is my Nasi Goreng Sambal Set.  Quite a hearty meal hor.  Food Coma lah after that.  Lucky its Friday the tarawih here is 8 rakaats.

Anyway, I did manage to put tempeh in my Sambal Goreng.  The husband went all the way to geylang market to buy.

So ta-daa ... tempeh! Nie star ingredient nie so must have lah kan.  But if you don't like tempeh can always omit it lah.  The husband don't eat paru so I did not put any paru in here.

Here's my plate a bit of everything.  The serunding was also store-bought from geylang market cos the husband is hantu serunding.  He bought 2 types.

1 stalk serai (lemongrass bulb), thinly sliced
3-4 tbsp thin tamarind juice

Chicken Rice

Sunday already ... there must be a day between Saturday and Sunday.  We had breakfast with MIL at Tekka Market.  Booooy was she famous ... met a few of her friends from table to table...

As usual I had my thosei, teh-O ice and tebu with lemon (this one not so happening) ...  We went marketing to stock up before CNY.  Everyone worries that there won't be enough food over the long weekend. After that MIL went kai-kai and me waited for the boss to finish his shaving  .... what's left of it.

Anyway dinner was chicken rice as we had guests ... I love guests so they can be my guinea pig.  Hahahha .... I try to use less or no oil in my cooking and other method of cooking ... for health sake ... slowly but surely changing ....

Kailan with Oyster Sauce

Serves 4
Ingredients
200 grams of medium sized Kai-lan
Sauce:
1 small shallot, thinly slices (best to remain in rings for better presentation)
1 clove of garlic, chopped
2 tablespoons of light soy sauce
2 tablespoons of vegetable oil
Small pinch of salt and pepper
1 teaspoon of sesame oil
2 tablespoons of oyster sauce
Method
1) Wash and soak whole leavy Kailan vegetables in lightly salted water for 15 minutes. Boil a medium pot of water over high flame. Add 1 teaspoon of sugar (add more if your pot is large). Blanch Kailan in the boiling water for 1 – 2 minute, or once the leaves appear darker green in colour. Drain on a strainer and place nicely on a serving dish.
2) Heat wok with vegetable oil on medium heat, stir-fry shallot and garlic till fragrant and browned. Reduce heat to low fire when shallot and garlic are lightly browned to allow standing time. Sprinkle salt and pepper, followed by light soy sauce (beware of its sizzling effect by the mixture of hot oil and light soy sauce). Heat off and immediately pour onto the vegetables. Top sesame oil and oyster sauce. Serve.

10 red onions 10 biji bawang merah*
6 cloves garlic (red onion & garlic blend) 6 ulas bawang putih*(*dikisar halus)
1/3 cup fermented soyabean (mashed) 1/3 cawan pes taucho (mat guna tauco biji2 dan mat lumatkan sedikit)
8 shitake mushrooms soaked 8 kuntum cendawan shittake segar, rendam
2 potatoes clean and cut into 4 2 biji kentang, kupas, potong 4 setiap 1, rendam
1 tbsp dark soy sauce 1 camca besar kicap pekat
1 tbsp light soy sauce 1 camca besar kicap cair atau secukup rasa
Sugar to taste Gula secukup rasa
Red and Green Chili cut Cili merah dan hijau, dipatah2
Parsley to garnish Hirisan daun sup, untuk hiasan

CARA MEMBUATNYA
  1. Panaskan minyak dalam periuk, tumis bahan kisar halus hingga harum, masukkan taucho, kacau dan masak hingga terbit minyak, guna api kecil dan kacau selalu. Masukkan ayam, gaul hingga mesra dan biar ayam kecut. Tuang air secukupnya dan biar mendidih.

  • Heat up oil, fry the blended ingredients for 5 mins and add fermented soyabean.  Stir and cook til the oil floats a little, lower the heat and stir often.  Add chicken, mix well.  Add enough water and let it boil
  • Add in potaoes, add dark and light soy sauce (a little bit first). Stir in a medium heat and let the potatoes half cook.  Add shitake mushroom and continue cooking til the potaoes are fully cook
